Okay, in my world I’ve transitioned to Fall-we won’t talk about the fact that it’s still in the upper 80s or 90s every day!  So apples, pumpkins, mums and gourds are all I can think about!

I whipped up this easy cinnamon apple bread recipe last weekend to prepare for the momentous occasion of college football starting back up and wanted to share it with you today.  This bread is ah-mazingly delicious (I know I made that word up but believe me, it warrants it’s own made up superlatives!)

Apple Bread Recipe

I can’t even describe to you how insanely good this apple bread makes your house smell while its baking-and it’s perfection to have a slice when it’s warm out of the oven! If you try it too I’d love it if you popped back and gave it a five-star review in the comments section!

How to Make Apple Bread

  • Mix the cinnamon sugar and chop your apples. Set aside.
  • Stir up batter in a stand mixer (affiliate link) or with a hand mixer.
  • Spray a loaf pan with nonstick spray and pour in half of the batter. Top with half of the apples and cinnamon sugar mixture.
  • Pour in remaining batter and tops with remaining apples and cinnamon sugar.
  • Pat toppings into the top of the bread with the back of a spoon and bake for 50 minutes.
  • Let cool ten minutes before removing from the pan.

Tips for Making the Best Apple Bread

  • Be sure to choose a firm apple variety such as Granny Smith, Pink Lady, Gala or Fuji. Softer types of apples won’t stand up to the baking.
  • Swirl a knife through the batter if desired before baking.

Can I Freeze Apple Bread?

Yes, this bread freezes well. Simply allow the bread to cool completely then wrap in foil and store in a freezer bag. When you are ready to eat the bread, allow to thaw at room temperature before serving.

Ingredients

Units Scale
  • 1/2 cup packed light brown sugar
  • 1 1/2 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1 large apple, peeled and finely chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour a 9 x 5-inch loaf pan.
  3. Mix brown sugar and cinnamon together in a bowl and set aside.
  4. In a stand mixer (affiliate link), combine white sugar and butter until smooth.
  5. Add eggs and vanilla and continue to beat on medium speed until combined.
  6. Add flour and baking powder, then milk.
  7. Pour half the batter into the prepared pan.
  8. Cover with half of the apples.
  9. Pat apples into batter with the back of a spoon.
  10. Sprinkle with half of sugar and cinnamon mixture.
  11. Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture.
  12. Pat topping into the batter with the back of a large spoon. Use a butter knife held vertically to swirl figure eights through the batter to slightly incorporate the topping.
  13. Bake for 50 minutes or until toothpick inserted into the center comes out clean.
  14. Cool in pan 10 minutes before transferring to a cooling rack.

  1. The photo alone is making me drool, but I’m curious: Most quick breads call for a bare minimum of mixing once the dry ingredients are added, to prevent toughness, but I don’t see any such instruction in this recipe. I’m hoping to make this tonight, but do you have any recommendations with regard to how much mixing is best for this bread?

    1. I’ve let my kids mix this many times and I’ve never noticed any difference in texture regardless of how much it was mixed Sonja. This is seriously one of the easiest and most delicious recipes ever!

  2. Used the bread pan size listed, but batter ran over pan and after 50 min baking it still was runny in Center. Used exact measurement also. Why?

    1. I’m not sure Colleen, have you checked to see if your oven temperature is accurate? I keep an oven thermometer in mine to make sure it’s showing the proper temperature.

  5. Would like to make this recipe with my FACS students at school. If we use the mini loaf pans (Mini Loaf Bread Baking Pan 6.1″ x 3.75″ x 2″ -) what time would you recommend for the baking time?

    The first time I made it exactly the same as what the recipe says and it was AMAZING my friends LOVED IT!

  8. A very delicious light loaf with a lovely flavour. The only change I made to the recipe was folding the apples into the batter. It turned out perfectly and I will definitely make it again and again.






  9. I made 2 loaves and it was gone w/in 24 hrs! So good! I would add more apples next time (and there will be a next time!). But otherwise great recipe!






  10. I substituted unrefined coconut sugar for the white sugar & used wholmeal all purpose flour instead of regular all purpose flour. Baked it in a water bath for an hour & 5 minutes. It came out so tasty & moist! My 3 year old loved a slice warm, so did I with a little butter on it. Delicious! Wil definitely make it again.
