Okay, in my world I’ve transitioned to Fall-we won’t talk about the fact that it’s still in the upper 80s or 90s every day!  So apples, pumpkins, mums and gourds are all I can think about!

I whipped up this easy cinnamon apple bread recipe last weekend to prepare for the momentous occasion of college football starting back up and wanted to share it with you today.  This bread is ah-mazingly delicious (I know I made that word up but believe me, it warrants it’s own made up superlatives!)

Apple Bread Recipe

I can’t even describe to you how insanely good this apple bread makes your house smell while its baking-and it’s perfection to have a slice when it’s warm out of the oven! If you try it too I’d love it if you popped back and gave it a five-star review in the comments section!

How to Make Apple Bread

  • Mix the cinnamon sugar and chop your apples. Set aside.
  • Stir up batter in a stand mixer (affiliate link) or with a hand mixer.
  • Spray a loaf pan with nonstick spray and pour in half of the batter. Top with half of the apples and cinnamon sugar mixture.
  • Pour in remaining batter and tops with remaining apples and cinnamon sugar.
  • Pat toppings into the top of the bread with the back of a spoon and bake for 50 minutes.
  • Let cool ten minutes before removing from the pan.

Tips for Making the Best Apple Bread

  • Be sure to choose a firm apple variety such as Granny Smith, Pink Lady, Gala or Fuji. Softer types of apples won’t stand up to the baking.
  • Swirl a knife through the batter if desired before baking.

Can I Freeze Apple Bread?

Yes, this bread freezes well. Simply allow the bread to cool completely then wrap in foil and store in a freezer bag. When you are ready to eat the bread, allow to thaw at room temperature before serving.

Ingredients

  • 1/2 cup packed light brown sugar
  • 1 1/2 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1 large apple, peeled and finely chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour a 9 x 5-inch loaf pan.
  3. Mix brown sugar and cinnamon together in a bowl and set aside.
  4. In a stand mixer (affiliate link), combine white sugar and butter until smooth.
  5. Add eggs and vanilla and continue to beat on medium speed until combined.
  6. Add flour and baking powder, then milk.
  7. Pour half the batter into the prepared pan.
  8. Cover with half of the apples.
  9. Pat apples into batter with the back of a spoon.
  10. Sprinkle with half of sugar and cinnamon mixture.
  11. Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture.
  12. Pat topping into the batter with the back of a large spoon. Use a butter knife held vertically to swirl figure eights through the batter to slightly incorporate the topping.
  13. Bake for 50 minutes or until toothpick inserted into the center comes out clean.
  14. Cool in pan 10 minutes before transferring to a cooling rack.

  1. Delicious, but very sweet! Will make again with less sugars. I tried using a mini loaf pan (6 mini loaves). Cooked 40 min.

  2. Great recipe with quick prep time. The result is a deliciously moist apple cake.
    It was a tad too sweet for me so I plan on cutting down on the brown sugar that goes on the top layer.

  4. I made this apple bread and doubled the recipe for two loaves. I substituted stevia for the sugar and Splenda brown sugar blend as my husband is diabetic. It turned out wonderful! Was nice and high. Sorry I didn’t get a picture as it looked like just the recipe! Thank you as desserts are so important in our house.






  5. What I did, was I poured the batter into the loaf pan, then I sprinkled half the sugar mixture on top, and with a knife I swirled it into the batter. Then I poured the chopped apples into the rest of the sugar mixture and coated the apples thoroughly, and then sprinkled it all on top of the batter, and pressed it in lightly. It’s in the oven now!






  6. Do you think it would work to mix the apples in the batter? I want to make mini loaves with this recipe and I think mixing in the batter will be easier for that.

    1. I have made this recipe on three separate occasions, three different ways, with great results every time. This recipe is extremely “user friendly”, so don’t be afraid to play around with it. It’s kinda delicious no matter what 🙂
      I have adapted the recipe by adding half of the apples and half of the brown sugar/cinnamon mixture to the batter, before pouring into the bread pan. Recommended by other users. This is by far my favourite! I do end up adding 5 more minutes each time to be sure the toothpick comes out clean, however this could just be necessary with my oven.






  7. I would rate it probably at 3.5 stars, but rounded up. I thought the cake itself was a little dry, but whenever I got to the layer of apples/sugar it was a nice combination. I might try again mixing it all together, more like a zucchini bread.

  11. Just made this and I wanted to eat it while in the oven! My home smelled delicious! Then the bread was done, and I took a bite right out of the oven…DELICIOUS!
