I am a BIG soup girl. I literally have soup for lunch almost every single day, especially during the week when I am home alone. I like to make a big batch on Monday and enjoy it all week and this beef and bean soup has been my go-to for months now!
This soup is so easy to make and has great flavor, and it’s packed with protein thanks to a generous helping of stew beef and white beans. It’s filling and while it’s perfect for chilly winter days, I enjoy this soup year round!
Why I love this recipe
- I can make it in my slow cooker or Instant Pot, so it’s convenient
- I can easily change it up depending on what’s in the pantry (see below)
- It’s hearty and filling so perfect on it’s own for lunch or you can serve it with my Dutch oven bread for dipping!
Ingredients

- stew meat – I like to get a chuck roast and cut my own so the pieces are smaller but you can buy precut stew meat as well
- veggies – yellow onion and carrots
- cannellini beans
- beef broth
- spices – salt, pepper, oregano
Pretty simple but oh-so-tasty!
Step by step
- Turn the Instant Pot on sauté mode and brown the meat on all sides. (Slow Cooker alternate directions below)
- Add the chopped veggies, beans, spices, and broth. Stir to mix well.
- Cook on meat/stew mode (90 minutes on high pressure).
- You can do a natural release or (carefully) do a manual release of pressure after cooking.
To make this in the slow cooker simply brown the meat in a skillet and transfer to the crock pot. Add the remaining ingredients and cook on high 6 hours or low 8 hours.

Tips for best results
- Cut your own stew meat from a chuck roast for small, bite-size pieces (and more afforable!)
- The spices make this soup so don’t skimp on them!

Variations
This is a forgiving recipe that can be changed up by what you have on hand. I have made it with great Northern beans instead of cannellini beans. I have added tomato paste and diced tomatoes to give it a different flavor.
You can also play with the veggies. Add in chopped celery or a bag of frozen mixed veggies to add to it. Make it your own!
Serving suggestions
I eat this beef soup on it’s own for lunch but for dinner I like to serve it with homemade garlic bread, Texas toast, or dutch oven bread. It’s also lovely with a little sprinkle of parmesan cheese on top!
Storage
Store leftover soup in an airtight container for up to 5 days.
Freeze for up to 3 months. Defrost in the refrigerator overnight before reheating.

- 1 yellow onion, diced
- (3) 15-ounce cans cannellini beans
- 32-ounce carton beef broth
- ¼ teaspoon ground black pepper
- ½ teaspoon salt
- 1 ½ teaspoons dried oregano

I prefer to purchase a chuck roast and cut it into bite-size pieces for the most tender option but you can purchase pre-cut stew meat if needed.
