I love easy recipes like this soup or our puff pastry turkey pot pie that help me use up my leftover Thanksgiving turkey. The fact I can make this hearty soup in my Crock Pot makes it even better-tons of flavor with minimal effort! 

I usually start making turkey bone broth from the leftover turkey carcass after we clean up from the big meal and use the broth the next day to make this easy turkey noodle soup. Like chicken noodle soup it is a comforting soup. While I usually make it with leftover turkey meat you can also use it with store-bought turkey or even a rotisserie chicken.

Why I love this recipe

I love that I only need a handful of ingredients for this crock pot soup. It is the perfect recipe for using up leftovers from Thanksgiving dinner and it is so easy and hands-off, it’s perfect for making after you spent the entire previous day in the kitchen! It is a great soup to enjoy on its own or on the side with turkey sandwiches.

Ingredients

  • leftover turkey – shredded or chopped
  • vegetables: carrots, celery, onion
  • chicken broth or turkey broth
  • spices: garlic powder, Italian seasoning, fresh thyme
  • wide egg noodles

Step by step

  1. Chop the vegetables and add to slow cooker.
  2. Add broth and spices. Cook for 3 hours on high or 6 hours on low.
  3. Stir in egg noodles and cook for 15 minutes on high. 
  4. Season to taste with salt and black pepper and serve garnished with fresh herbs if desired.

Tips for best results

  • Don’t overcook the noodles, if you leave them too long they absorb too much liquid and will get mushy.
  • You can use chicken broth or store-bought or homemade turkey broth for this recipe. You can also substitute vegetable broth if needed. Depending on the broth you use, you may want to adjust the seasoning with different spices for a deeper flavor. Homemade broth usually has a more complex flavor profile while store-bought broths tend to have more salt. If your broth seems bland try adding bay leaves, fresh garlic, or poultry seasoning to add additional flavor.
  • If you have leftover baby carrots from your Thanksgiving appetizers, this is a great way to use them!

Variations

Instant Pot: Add all ingredients except the egg noodles to the Instant Pot and cook on soup mode. Allow the pressure to naturally release for 10 minutes before doing a quick release. Add the egg noodles and cook on sauté mode for 10 minutes or until al dente.

Stovetop: Add all ingredients except noodles to a large stock pot or Dutch oven. Bring to a simmer and cook for 15 minutes or until vegetables are soft. Add noodles and cook 5-10 minutes or until noodles are done.

Storage

Store leftover soup in an airtight container in the refrigerator for up to 3-4 days.

Freeze soup in a freezer-safe container (affiliate link) for up to 3 months.

Ingredients

  • 3 medium carrots, peeled and sliced
  • 2 stalk celery, sliced
  • 1 medium yellow onion, diced
  • 8 cups turkey or chicken broth
  • 2 teaspoons garlic powder
  • 23 sprigs fresh thyme or 1/2 teaspoon dried thyme
  • salt and ground black pepper to taste
  • 8 ounces wide egg noodles

Instructions

  1. Add all ingredients except egg noodles to a slow cooker and stir to mix.
  2. Cook on high 3 hours or low 6 hours.
  3. Add egg noodles to the slow cooker and cook for 15 minutes on high or until noodles are al dente.
