I whipped up this easy cinnamon apple bread recipe last weekend to prepare for the momentous occasion of college football starting back up and wanted to share it with you today.  This bread is ah-mazingly delicious (I know I made that word up but believe me, it warrants it’s own made up superlatives!)

Why I love this recipe

I can’t even describe to you how insanely good this apple bread makes your house smell while its baking-and it’s perfection to have a slice when it’s warm out of the oven! It is a soft bread with a moist crumb and crunchy streusel-like topping and cinnamon swirl.

Ingredients

  • apples – red delicious, granny smith, and gala are some of my favorite varieties
  • cinnamon
  • brown sugar
  • granulated white sugar
  • baking powder
  • eggs
  • butter
  • flour
  • vanilla extract
  • milk

Step by step

  1. Preheat the oven and spray a loaf pan with nonstick spray.
  2. Mix the cinnamon sugar and chop your apples. Set aside.
  3. Beat the butter and sugar together in a stand mixer (affiliate link) or with a hand mixer.
  4. Add eggs and vanilla and mix until combined. Add the dry ingredients and mix again. Add the milk a little at a time until the batter is just combined.
  5. Pour half of the batter into the prepared loaf pan. Top with half of the apples and cinnamon sugar mixture.
  6. Pour in remaining batter and top with remaining apples and cinnamon sugar.
  7. Pat toppings into the top of the bread with the back of a spoon and bake for 50 minutes.
  8. Let the bread cool for ten minutes before removing from the pan.

Tips for best results

  • Be sure to choose a firm apple variety such as Granny Smith, Pink Lady, Gala or Fuji. Softer types of apples won’t stand up to the baking.
  • Swirl a knife through the batter if desired before baking if you want the apple chunks and cinnamon sugar more uniform through the bread.

Storage

Store bread covered with plastic wrap at room temperature for up to 3 days. Store in the refrigerator for up to a week.

This bread also freezes well. Simply allow the bread to cool completely then wrap in foil and store in a freezer bag. When you are ready to eat the bread, allow to thaw at room temperature before serving.

Ingredients

Units Scale
  • 1/2 cup packed light brown sugar
  • 1 1/2 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1 large apple, peeled and finely chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour a 9 x 5-inch loaf pan.
  3. Mix brown sugar and cinnamon together in a bowl and set aside.
  4. In a stand mixer (affiliate link), combine white sugar and butter until smooth.
  5. Add eggs and vanilla and continue to beat on medium speed until combined.
  6. Add flour and baking powder, then milk.
  7. Pour half the batter into the prepared pan.
  8. Cover with half of the apples.
  9. Pat apples into batter with the back of a spoon.
  10. Sprinkle with half of sugar and cinnamon mixture.
  11. Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture.
  12. Pat topping into the batter with the back of a large spoon. Use a butter knife held vertically to swirl figure eights through the batter to slightly incorporate the topping.
  13. Bake for 50 minutes or until toothpick inserted into the center comes out clean.
  14. Cool in pan 10 minutes before transferring to a cooling rack.

  1. Great, easy recipe from ingredients you have on hand. We like desserts less sweet so are used a lot less brown sugar, added more apples cinnamon and vanilla. I also added cardamom to the apples but next time I will try it in the bread. Everyone enjoyed it.

  2. This bread is absolutely delicious! I agree it’s more of a coffee cake type. The layer of apples and cinnamon-sugar was a delightful surprise. I added more apples and my eggs were jumbo size with double yolks in both! It was so rich and decadent. I will absolutely make this again!

    1. You can definitely make this with a one-to-one gluten free flour. I used Cup for Cup and ours was great. As a Texas girl, I had to chop a handful of pecans to mix in with the apple layer. Next time, I’ll add a second apple, too. But there will absolutely be a next time!

  3. The first time i made this i followed the recipe..it wasn’t very flavorful and needed more apple. I made it again and used 2 apples, which i cut up and smothered in cinnamon sugar, and i doubled the amount of brown sugar. My mom says it needed more cinnamon but she is addicted to cinnamon baked goods..I also added a struesal topping as well and a splash more milk in the dough and it was perfectly moist

  5. I would definitely call this apple cake, instead of bread… I was looking for something more “bread-like!” Despite this, it was still very good!

  6. This is by far the best apple cinnamon bread I’ve ever had. It’s so fluffy and buttery, it just melts in your mouth. It’s perfect warm with a nice, hot cup of coffee.

    Does the recipe work well subbing in other fillings such as blueberries or chocolate chips?

    1. I’m so glad you enjoyed it, I have made it with blueberries and strawberries and it was amazing. I have yet to try with chocolate chips though! Sounds like a yummy experiement!

  7. Can you make batter and fill tin the night before, to bake in the morning, or will it go bad in the fridge overnight?

  8. This is going to be my new favorite baked good to make. Love the fluffiness of the bread and it’s perfectly sweet with the apples and cinnamon sugar topping.

  9. Turned out beautifully. I added chopped pecans and substituted Stevia for the sugars, both brown and white. This is a keeper.

  10. My grandson can’t have dairy. Can I substitute butter flavored shortening and almond milk? Do you think it would change the consistency or I would have to adjust any other ingredients?

    1. I made three loafs for Mother Day gifts as thank you’d for all they do. Guess what?? They loved them, will make again for sure!!

  13. Absolutely love this recipe. I used 1.5 or 2 granny smith apples we like to have alot of apples in it.
