Okay, in my world I’ve transitioned to Fall-we won’t talk about the fact that it’s still in the upper 80s or 90s every day! So apples, pumpkins, mums and gourds are all I can think about!
I whipped up this easy cinnamon apple bread recipe last weekend to prepare for the momentous occasion of college football starting back up and wanted to share it with you today. This bread is ah-mazingly delicious (I know I made that word up but believe me, it warrants it’s own made up superlatives!)

Apple Bread Recipe
I can’t even describe to you how insanely good this apple bread makes your house smell while its baking-and it’s perfection to have a slice when it’s warm out of the oven! If you try it too I’d love it if you popped back and gave it a five-star review in the comments section!
How to Make Apple Bread
- Mix the cinnamon sugar and chop your apples. Set aside.
- Stir up batter in a stand mixer (affiliate link) or with a hand mixer.
- Spray a loaf pan with nonstick spray and pour in half of the batter. Top with half of the apples and cinnamon sugar mixture.
- Pour in remaining batter and tops with remaining apples and cinnamon sugar.
- Pat toppings into the top of the bread with the back of a spoon and bake for 50 minutes.
- Let cool ten minutes before removing from the pan.
Tips for Making the Best Apple Bread
- Be sure to choose a firm apple variety such as Granny Smith, Pink Lady, Gala or Fuji. Softer types of apples won’t stand up to the baking.
- Swirl a knife through the batter if desired before baking.
Can I Freeze Apple Bread?
Yes, this bread freezes well. Simply allow the bread to cool completely then wrap in foil and store in a freezer bag. When you are ready to eat the bread, allow to thaw at room temperature before serving.

Ingredients
- 1/2 cup packed light brown sugar
- 1 1/2 teaspoon ground cinnamon
- 2/3 cup white sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 cup milk
- 1 large apple, peeled and finely chopped
Instructions
- Preheat oven to 350 degrees.
- Grease and flour a 9 x 5-inch loaf pan.
- Mix brown sugar and cinnamon together in a bowl and set aside.
- In a stand mixer (affiliate link), combine white sugar and butter until smooth.
- Add eggs and vanilla and continue to beat on medium speed until combined.
- Add flour and baking powder, then milk.
- Pour half the batter into the prepared pan.
- Cover with half of the apples.
- Pat apples into batter with the back of a spoon.
- Sprinkle with half of sugar and cinnamon mixture.
- Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture.
- Pat topping into the batter with the back of a large spoon. Use a butter knife held vertically to swirl figure eights through the batter to slightly incorporate the topping.
- Bake for 50 minutes or until toothpick inserted into the center comes out clean.
- Cool in pan 10 minutes before transferring to a cooling rack.

can you substitute baking soda for baking powder?
No.
No unfortunately you can’t Amanda.
If I used frozen sliced apples instead of fresh should I change the amount if liquid or dry ingredients? And what quantity would you recommend?
Can you substitute almond milk for regular milk?
I have not personally tried it with this recipe Linda but I think it would work based on other recipes I’ve tried in the past. If you try it I would love to hear back from you how it tasted.
So cinnamon-y and delicious! Both my kids LOVED this. We used Red Delicious apples because I had a bunch that I was gifted and needed to use, and it turned out great. I’ll be sure to try with better baking apples next time!

It was easy to follow but it came out pretty dry. What would be some tips to make it more moist?
Did you follow the recipe exactly or were there any substitutions? It is normally not at all dry so I’m trying to brainstorm what could have happened.

If you only have red apples would larger pieces hLeo our wither them baking away?
It depends on what kind of apples they are, the best for baking are Granny Smith, Pink Lady, Gala or Fuji but you won’t get a bad result if you use a different variety, the bread will still taste good!
Can I make these into cupcakes?
I haven’t tried it Lena but I would think it would be fine, although they would be more muffins than cupcakes. You would need to decrease the baking time too.
Can I use salted butter?
I have not but I believe you can substitute okay, there may be a slight difference in the final flavor but I think it would be fine.
I made this Cinnnamon/apple bread this morning. I made some substitution to made it healthier. I Substituted coconut sugar for the brown sugar, a stevia/erythritol mix for the white sugar, and whole wheat flour for the white flour. It was delicious!

What kind of apples are best to use?
I recommend Granny Smith, Pink Lady, Gala or Fuji apples Angie, they bake well without getting mushy! Hope that helps!

Can I use water instead of milk?
I would not recommend it Carol, although I have not tried it myself.
What size loaf pan was used in this recipe?
I used a 9 inch by 5.25 inch pan but it will fit a slightly smaller loaf pan too.

My husband and I loved the recipe! My only thought is to not finely chop the apples, but to make them more slices (like an apple pie) because with them finely chopped I felt like we didn’t taste the apple much. Great recipe though!!

Can you grade the apples instead of chopped apples ?
Yes that would work Patricia, it may change the texture a bit but I don’t think it would affect the flavor.
