Okay, in my world I’ve transitioned to Fall-we won’t talk about the fact that it’s still in the upper 80s or 90s every day!  So apples, pumpkins, mums and gourds are all I can think about!

I whipped up this easy cinnamon apple bread recipe last weekend to prepare for the momentous occasion of college football starting back up and wanted to share it with you today.  This bread is ah-mazingly delicious (I know I made that word up but believe me, it warrants it’s own made up superlatives!)

Apple Bread Recipe

I can’t even describe to you how insanely good this apple bread makes your house smell while its baking-and it’s perfection to have a slice when it’s warm out of the oven! If you try it too I’d love it if you popped back and gave it a five-star review in the comments section!

How to Make Apple Bread

  • Mix the cinnamon sugar and chop your apples. Set aside.
  • Stir up batter in a stand mixer (affiliate link) or with a hand mixer.
  • Spray a loaf pan with nonstick spray and pour in half of the batter. Top with half of the apples and cinnamon sugar mixture.
  • Pour in remaining batter and tops with remaining apples and cinnamon sugar.
  • Pat toppings into the top of the bread with the back of a spoon and bake for 50 minutes.
  • Let cool ten minutes before removing from the pan.

Tips for Making the Best Apple Bread

  • Be sure to choose a firm apple variety such as Granny Smith, Pink Lady, Gala or Fuji. Softer types of apples won’t stand up to the baking.
  • Swirl a knife through the batter if desired before baking.

Can I Freeze Apple Bread?

Yes, this bread freezes well. Simply allow the bread to cool completely then wrap in foil and store in a freezer bag. When you are ready to eat the bread, allow to thaw at room temperature before serving.

Ingredients

Units Scale
  • 1/2 cup packed light brown sugar
  • 1 1/2 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1 large apple, peeled and finely chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour a 9 x 5-inch loaf pan.
  3. Mix brown sugar and cinnamon together in a bowl and set aside.
  4. In a stand mixer (affiliate link), combine white sugar and butter until smooth.
  5. Add eggs and vanilla and continue to beat on medium speed until combined.
  6. Add flour and baking powder, then milk.
  7. Pour half the batter into the prepared pan.
  8. Cover with half of the apples.
  9. Pat apples into batter with the back of a spoon.
  10. Sprinkle with half of sugar and cinnamon mixture.
  11. Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture.
  12. Pat topping into the batter with the back of a large spoon. Use a butter knife held vertically to swirl figure eights through the batter to slightly incorporate the topping.
  13. Bake for 50 minutes or until toothpick inserted into the center comes out clean.
  14. Cool in pan 10 minutes before transferring to a cooling rack.

  1. This bread was soooo applelicious! Really moist. I used 1 1/2 honey crisp apple diced really small. I added 1/2 cup of chopped walnuts and 1 tsp apple pie spice. Mine baked for 65 minutes. Hubby loves it. Thanks for sharing!






    1. If you use self-rising flour you’ll need to skip the baking powder. I haven’t tried it myself yet, so if you do it before I do please come back and let me know how it turned out!

  3. I absolutely love this recipe! Since I found it a month ago, I think I’ve made it about 5 times! People love it and its a great dessert to bring to dinner parties. On my quest to find how to make this recipe more conventional due to COVID, I turned this into apple bread muffins! Same recipe just baked in muffin tins. This way, people have their own muffin and no one needs to touch each others food. Thank you for the amazing recipe, this might have to become one of my family favorites!






  4. There are several things I really like about this recipe. In fact, I made a loaf last week, and we ate it up so quickly, that I made a second loaf this morning. First, of course, it is delicious! I also appreciate the fact that it uses everyday ingredients most people have in their pantries, plus it was easy to mix it up without messing up your entire collection of bowls. I will add that I made a few minor changes, but not because I thought there was something amiss in the original recipe, but just to tweak it for our family’s likes and needs. Since we like nuts, I added 1/2 c. chopped walnuts with the apples, and because my husband is diabetic I try to curtail the amount of sugar where possible, so I cut back the white sugar to 1/2 c. and used 1/4 c. of Splenda brown sugar blend to the cinnamon part, instead of regular brown sugar. It was still great with the changes I made. Thanks for sharing!

  5. Loovely, such a moreish recipe. I did mine in a Bundt tin, turned out rather beautifully, as the top was all smooth looking.






  6. I went to take mine out of the pan and where I put the layer in, it fell apart. I patted things down with a spatula as mentioned but I don’t know where I went wrong where this happened. Any ideas?

    I love this recipe and I have made it a bunch of times! Every time I make it the middle sinks in…what could I be doing wrong? Am I not baking it long enough? I have made other breads but not had the same trouble. Thanks!

    1. Hmmm…what size pan are you using? Is it filling it up completely? If you overfill quickbreads and they reach the top but still need to rise they will collapse, that is the only thing I can think of off the top of my head. Let me know!

  8. Is it possible to not have the pieces of apples, but still have the flavor? I know Weird question, but I hate pieces of fruit in the bread!

    1. It will still be a moist, sweet bread but it will be a cinnamon bread. I’ve made it and liked it a lot but it does have a slightly different flavor. (If you finely dice the apples quite small you can hardly tell they are in thebread)

    2. M. When I make Apple Bread, I grate the apple with a box beater (or you could use the grate function of a food processor). This makes the apple pieces so small, you hardly know the pieces are there. You might need to squeeze them if it’s a juicy apple. I’m making this recipe right now. Yum

    3. They actually make Apple Extract. It gives the apple flavor without the actual apples. I have never seen it in stores. You may have to order online.

  9. I made this today for the first time. It came together really quickly and tastes delicious. While it was baking my 3 year old came downstairs to ask if it was ready. He said he smelled it upstairs. The family loves it. I’m saving the recipe and plan on making it again.
