Why I love this recipe
I love this recipe because it’s a fun, fast variation on traditional rice krispies treats and always a hit. It brings back those carefree cereal-filled mornings, but in dessert form! It’s one of those treats that works for everything: school parties, my kids’ birthdays, or “just because” days.
Ingredients
Just three straightforward ingredients turn into a fun and delicious treat. They are likely already in your pantry, so gather them up and let’s get mixing!
- salted butter (or unsalted butter and a pinch of salt)
- mini marshmallows – smaller marshmallows melt more easily
- Fruity Pebbles cereal – name brand or generic, either will work
My traditional rice krispies treats call for a teaspoon of vanilla extract but I find the fruity pebbles version doesn’t need the flavor boost. You can add it if you like, they taste delicious either way.
Equipment
- nonstick cooking spray
- aluminum foil
- 9 by 13-inch baking dish
- rubber spatula or back of a large spoon for pressing the mixture in the pan
Step by step
- Line the baking dish with aluminum foil and spray it lightly to prevent sticking.
- In a large pot over medium heat, melt butter. Add a full bag of marshmallows and stir until completely melted.
- Remove the pot from the heat and stir in the cereal until evenly coated.
- Add the remaining marshmallows and gently fold them in.
- Press the marshmallow mixture evenly into the prepared pan and let it cool until firm.
- Slice into bars and serve!
The recipe calls for cutting the treats into 15 bars but you can make anywhere from 12 to 24 depending on your desired size and how many you are feeding.
Tips for best results
- Use fresh mini marshmallows for the softest texture and that satisfying stretchy pull. Hard, stale marshmallows will not give you the light and airy texture you want.
- Take the pot off the heat before stirring in the cereal to keep those fun colors from fading.
- Press the mixture gently into the pan using buttered hands or wax paper for a smooth, even top. Don’t press so hard you flatten them, just even the surface.
- Let the bars cool completely before slicing, as it helps them set and hold their shape.
Variations
You can play with this recipe by switching up the cereal flavors, any crispy rice cereal will work. You can do half and half with regular Rice Krispies, try cocoa krispies, or a make our red velvet rice krispies treats.

Storage
Store the bars in a sealed airtight container or ziploc bag at room temperature for up to 5 days. I like using parchment to separate layers so they don’t stick together.
