    Parmesan Roasted Potatoes

    Perfectly soft on the inside and crispy on the outside and packed with onion and parmesan flavor, these roasted potatoes are sure to be your new favorite dinner side dish recipe!

    My husband is the traditional "meat and potatoes" kind of guy and I'm always experimenting with new recipes to help satisfy those cravings. (I'm more a pasta and seafood kind of girl naturally!) Recently I came up with these Onion Parmesan Roasted Potatoes and it proved to be a HUGE hit!

    These potatoes are roasted perfectly soft on the inside-light and fluffy. The outside is ever so slightly crispy with perfectly caramelized onion and flavorful parmesan cheese.  Seriously-these meet all the requirements for a recipe I post here on the blog-super easy and SO delicious!!

    Ingredients:

    • 1.5 lb honey gold potatoes, halved
    • ¼ cup olive oil
    • 1 envelope (1 oz) onion soup mix
    • ½ cup parmesan plus additional for garnish

    *If you can't find honey gold potatoes any potato will do-just be sure to chop into pieces no larger than 1" thick.*

    Preheat oven to 425 degrees. Add all ingredients to a large gallon bags and shake well to coat. Pour in a single layer on a well greased 9 by 13 casserole dish. Cover with aluminum foil and roast for 25 minutes covered, then 20 minutes uncovered. Garnish with additional parmesan if desired.

    Can I just say that for some reason I love recipes where you mix things in gallon bags...is it just me? The other day I made chicken strips and did that and I think it's just the act of shaking the bag all around that brings out the inner kid in me (my boys always want a turn!)

    So, are you more "meat and potatoes" or "seafood and pasta"?
