What is Tetrazzini?

Tetrazzini is a classic American baked pasta dish named after the Italian opera singer Luisa Tetrazzini. It’s made with cooked poultry or seafood, mushrooms, and a rich cream sauce, all mixed with pasta and sprinkled with cheese like Parmesan and baked until golden and bubbly.Tetrazzini is known for its creamy texture and comforting, hearty flavors.

  • it is fast to assemble, then just toss it in the oven to bake
  • it’s a great recipe for using up leftover roast turkey
  • both kids and adults love it, making it perfect for family dinners or gatherings.

Ingredients

  • pasta – fettucini, spaghetti, linguine, or egg noodles are all good choices
  • butter
  • cooked turkey – chopped or shredded
  • cream of mushroom soup
  • sour cream
  • spices – salt, garlic powder, ground black pepper
  • chicken broth
  • frozen peas
  • shredded mozzarella cheese
  • parsley for garnish (optional)

Step by step

  1. Preheat the oven and spray a 9×13-inch baking dish with nonstick cooking spray. Set aside.
  2. Boil the pasta al dente in a large pot according to package directions.
  3. Meanwhile, in a large mixing bowl, combine butter, turkey, cream of mushroom soup, sour cream, spices, broth, and peas. Stir to combine.
  1. When pasta is cooked and drain it and add to the turkey mixture and stir.
  2. Pour turkey and noodle mixture into the prepared casserole dish. Sprinkle with mozzarella cheese.
  3. Bake 30 minutes or until cheese is melted and golden brown.

Tips for best results

  • Ensure your pasta is cooked al dente as it will continue to soften when baked.
  • Season your cream sauce to taste generously to prevent the dish from being too bland.
  • Use freshly grated mozzarella instead of pre-shredded for the best melting quality.
  • Broil the tetrazzini for a few minutes at the end of baking if you love a crispy, golden cheese top.

Variations

This is one of those recipes you can really play with and make your own.

  • make chicken tetrazzini instead with leftover chicken
  • add mushrooms to the mix for an earthy flavor
  • throw in some red bell pepper for a pop of color and sweetness
  • use a different cheese, like cheddar, parmesan cheese, or a blend, for a new cheesy twist
  • amp up the flavor with sautéed diced onion
  • add a sprinkling of panko breadcrumbs mixed with melted butter for a crunchy topping
  • introduce some heat with a sprinkle of red pepper flakes

Serving suggestions

Pair your tetrazzini with a simple fresh Caesar salad or a simple green salad with a light dressing to balance the richness of the tetrazzini.

For something a bit heartier, garlic bread or a Texas toast pairs wonderfully, perfect for soaking up all that creamy sauce, or if you’re looking to add more veggies to your meal, Southern green beans or roasted Brussels sprouts make delightful sides.
