Remember last week when I told you about my husband craving Zaxby’s Zax Sauce after our trip to South Carolina? Well, when I was cooking up his chicken and dipping sauce I decided to make these Crispy Baked Onion Rings to go with them-they were super easy, went great with the sauce, and he couldn’t even tell they weren’t fried.
Why I love this recipe
I’ve tried a lot of baked onion ring recipes in the past that don’t turn out. The texture of fine breadcrumbs in many of them really gives it away that they are baked instead of fried.
The panko bread crumbs are key to making these taste just like their fried counterparts. The key to getting the panko crumbs to stick to the onion rings and not fall off is adding that bit of mayonnaise to the egg mixture, it really thickens it and makes it “grab” those bread crumbs. These are definitely a keeper in my recipe box!
Ingredients
- sweet onion
- eggs
- mayonnaise
- flour
- salt and pepper
- cayenne pepper
- Italian style Panko bread crumbs
- nonstick spray
Step by step
- Preheat oven to 450 degrees. Spray a baking sheet generously with nonstick spray and set aside.
- In three medium bowls assemble the following: one bowl with flour, cayenne pepper, and a generous pinch of salt and pepper. A second bowl with eggs and mayonnaise, mixed until uniform. Fill the third bowl with the bread crumbs.
- Dip onion rings first in the flour, then egg mixture allowing excess to drip off, and finally in bread crumbs before laying on baking sheet. Lay rings in a single layer making sure they do not touch each other or overlap.
- Spray rings generously with nonstick spray and bake for 15 minutes or until golden brown.
(I recommend serving them with the copycat Zax Sauce!)
Storing & Reheating
Store leftovers (if there are any!) in an airtight container in the refrigerator for up to three days. Reheat in the oven at 400 degrees for 5 minutes or until nice and crispy.

- 2 large eggs
- 1 tablespoon mayonnaise
- 1 cup flour
- salt & pepper
- 1 tsp cayenne pepper
- 2 cups Italian style panko breadcrumbs
- nonstick spray
Instructions
- Preheat oven to 450 degrees.
- Spray a baking sheet generously with nonstick spray.
- Mix flour, cayenne pepper and a pinch each of salt and pepper in a medium bowl and set aside.
- In another bowl mix eggs and mayonnaise.
- Pour panko breadcrumbs in a 3rd bowl.
- Dip onion rings first into flour mixture, then eggs, then panko crumbs.
- Lay rings in single layer, not touching, on baking sheet.
- Spray rings generously with nonstick spray and bake for 15 minutes or until golden brown.
