This easy cheesy potato casserole is a comforting and filling side dish. We make this recipe for holidays like Thanksgiving, Christmas, or Easter dinner but it is an easy enough recipe to make year-round as well.

Filling side dish – The potatoes in this casserole make this the perfect side dish to fill up bellies and it can help stretch a meal that might be lighter on the protein. It is also an inexpensive recipe to make and great for feeding a crowd.

Simple, no-fail recipe – Many recipes add in cream of chicken soup or cream cheese but this recipe uses just a few ingredients and gets its creaminess from the potatoes themselves and sour cream instead. It is very easy and foolproof!

Ingredients

  • potatoes
  • butter
  • salt and black pepper
  • parsley
  • sour cream
  • sharp cheddar cheese
  • bacon

Step by step

  1. Preheat oven and spray a 9 by 13 inch casserole dish with nonstick cooking spray.
  2. Dice potatoes into bite-size pieces. Place in a large pot and cover with hot water. Boil potatoes for 12 minutes or until fork-tender. Drain.
  3. Meanwhile, cook bacon in a large skillet. Remove to a paper towel lined plate and crumble once cool.
  4. In a large bowl, add potatoes, melted butter, and seasonings. Stir to coat.
  5. Allow the potatoes to cool for 5 minutes, then stir in sour cream, cheese, and bacon, reserving 1/2 cup each of cheese and .bacon for the topping.
  6. Pour potato mixture into the casserole dish. Sprinkle the top of the potatoes with additional half cup cheddar cheese and bake for 15 minutes.
  7. Remove from oven and top with extra bacon and parsley if desired before serving.

Variations

  • top with chopped green onions or fresh chives and sour cream for a loaded potato casserole
  • use ranch seasoning instead of the parsley
  • add in chopped yellow onion or diced bell peppers

FAQs

Do I need to peel the potatoes before boiling?

I recommend using gold potatoes or red potatoes for this recipe, they have tender skins and do not require peeling. If you use russet potatoes I recommend peeling them first.

Is cheesy potato casserole the same thing as funeral potatoes?

No, funeral potatoes are a similar dish but they are usually made with shredded or diced hash browns.

Serving suggestions

This is a wonderful starchy potato side dish to serve alongside green bean casserole, corn casserole, and Southern collard greens with ham for Easter or Christmas.

You could also simply pair it with baked chicken breast and a simple salad for easy weeknight family meals. I think it would also be fun to top a helping of the casserole with a fried egg for brunch!

Ingredients

  • 2 pounds red potatoes or other tender skinned potato (see note below)
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried parsley
  • 1/3 cup sour cream
  • 2 1/2 cups shredded sharp cheddar cheese, divided
  • 6 pieces bacon, divided

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and spray a 9 by 13 inch casserole dish with nonstick cooking spray.
  2. Dice potatoes into bite-size pieces. Place in a large pot and cover with hot water. Boil potatoes for 12 minutes or until fork-tender. Drain.
  3. Meanwhile, cook bacon in a large skillet. Remove to a paper towel lined plate and crumble once cool.
  4. In a large bowl, add drained potatoes, melted butter, and seasonings. Stir to coat.
  5. Allow the potatoes to cool for 5 minutes, then stir in sour cream, cheese, and bacon, reserving 1/2 cup each of cheese and bacon for the topping.
  6. Pour potato mixture into the casserole dish. Sprinkle the top of the potatoes with additional half cup cheddar cheese and bake for 15 minutes.
  7. Remove from oven and top with extra bacon and parsley if desired before serving.

Notes

If using russet potatoes, peel the potatoes before boiling.

Store leftovers in an airtight container in the refrigerator up to 3 days.

  1. Made it as a side dish to crumbed chicken fillet. Just sitting to eat now & watching the fams loving it. I varied it slightly, left bacon out of one corner for my vegetarian son, & added some diced onion for everyone.
