Why I love this recipe

As someone who loves garlic, I really appreciate how this sauce highlights the strong, aromatic essence of fresh garlic. This sauce also works well with a ton of meals. Pour it over pasta, drizzle it on roasted veggies or roasted potatoes, or use it as a dipping sauce for crusty bread. The possibilities are endless.

Ingredients

  • minced garlic cloves
  • Italian seasoning
  • all-purpose flour
  • chicken broth or vegetable broth
  • heavy cream
  • Parmesan cheese
  • salt and black pepper

Step by step

  1. In a saucepan over medium-low heat, melt the unsalted butter.
  2. Add the garlic and Italian seasoning to the melted butter and cook until fragrant for 45-60 seconds.
  3. Add the flour and whisk or stir with a rubber spatula to form a paste.
  4. Slowly pour in the broth, whisking constantly until smooth and combined.
  5. Bring to a low simmer over medium heat for about 2 minutes or until it thickens. Then, add the heavy cream and grated Parmesan cheese.
  6. Whisk and heat until the cheese melts and the sauce is smooth and creamy.
  7. Season to taste with salt and pepper.

Tips for best results

  • Use real Parmesan cheese—none of that powdered stuff. Freshly grated is the way to go as pre-grated cheeses usually have a powder coating added to them to prevent sticking which affects the texture when melted.

Variations

Try adding a splash of white wine or a sprinkle of red pepper flakes for a little extra oomph. You can also toss in some cooked bacon or sautéed mushrooms for a heartier version of this sauce.

Adjust the seasoning to your liking. You’re the boss of your sauce! Experiment with adding other spices like oregano, parsley, or onion powder to make it your own.
