Ingredients

- extra virgin olive oil
- fresh thyme
- salt and black pepper (optional)
Step by step
- Start by preheating your oven to 275 degrees Fahrenheit.
- Trim the top third of each head of garlic to expose the cloves.
- Place the heads of garlic in a loaf pan and cover them with olive oil. Ensure the garlic is fully submerged to prevent drying out. Add sprigs of thyme for extra flavor.
- Transfer the loaf pan to the preheated oven and let the garlic confit cook for 1 hour and 15 minutes. The low temperature allows for gentle cooking, resulting in tender, caramelized cloves.
- Once roasted, let the garlic cool for 20 minutes. Gently extract the cloves from each bulb. Transfer the garlic confit and infused oil to a clean, airtight container for storage.
Tips for best results
- Experiment with different fresh herbs and spices to customize the flavor of your garlic confit. Rosemary sprigs, sage, oregano, and bay leaves are excellent options for infusing additional aroma and complexity. Red pepper flakes are another great add-in.

It is important to refrigerate garlic confit. Garlic is an extremely low-acid vegetable. When it is stored improperly at room temperature it can be at risk of botulism bacteria growing. ALWAYS refrigerate garlic confit!
You can also freeze the confit in an ice cubes tray then transfer the cubes to a freezer bag for single servings.

- 8–10 heads of garlic
- 2 cups olive oil
- 10–12 sprigs of thyme
- salt and pepper to taste (optional)
Instructions
- Preheat your oven to 275 degrees Fahrenheit.
- Cut and remove the top third of the heads of garlic.
- Place the garlic in a loaf pan or baking dish and cover with the olive oil.
- Add the springs of thyme and spread them between the garlic.
- Bake garlic in the oven for 1 hour and 15 minutes.
- Remove from the oven and let it cool off for 20 minutes.
- Squeeze out the garlic cloves out of each head and transfer to an airtight container.
