Step by step

  1. Preheat your oven to 400°F and grease a large rimmed baking tray with non-stick cooking spray.
  2. Slice the washed baby potatoes in half and place them in a large bowl. Toss with avocado oil, minced garlic, chopped herbs, and seasonings until well coated.
  3. Spread the potatoes in a single layer on the prepared baking tray. Bake for 45-55 minutes until the potatoes are golden brown and fork tender.
  4. Transfer to a serving platter, garnish with Parmesan and fresh herbs if desired, and enjoy!

  • Scrub off any dirt from the potatoes and pat them dry before coating with oil.
