Ingredients
- boneless skinless chicken breast
- olive oil
- poultry seasoning
- yellow onion
- chicken broth
- cream of mushroom soup
- frozen mixed vegetables
- milk
- Bisquick™ baking mix
Step by step
- Cut chicken into bite-size pieces.
- Heat olive oil in a Dutch oven over medium-high heat. Add chicken and cook through, stirring often.
- Add poultry seasoning and stir to coat.
- Add onion and cook for 2-3 minutes until it starts to become translucent.
- Add veggies, soup, broth, and 2 cups of milk. Stir.
- Bring to a boil then reduce heat to a simmer.
- In a medium bowl mix Bisquick and 1 cup milk until a soft dough forms. Drop dough by large spoonfuls into the simmering liquid the pot. Place the lid on the Dutch oven and reduce heat to medium-low. Cook 10 minutes without opening the lid to allow the Bisquick drop dumplings to steam. Remove the lid and cook an additional 5 minutes or until the dumplings are cooked through.
- Serve hot, garnished with chopped parsley if desired.
Variations and substitutions
- use cans of cream of chicken soup instead of cream of mushroom
- add your favorite vegetables like chopped celery or broccoli
- experiment with the flavor using herbs such as fresh or dried thyme, a bay leaf, rosemary, marjoram, or season to taste with simply salt and pepper
- use shredded rotisserie chicken to make it even faster
- use chicken thighs instead of chicken breasts
Serving suggestions
While it can be a complete meal on its own there are a lot of great options for what to serve with chicken and dumplings. Light veggie dishes like salad, roasted vegetables, or Southern green beans are my favorites.
Storage
Store leftovers in an airtight container in the refrigerator up to 3 days. Reheat in the microwave.
