Does beer cheese have alcohol?
Yes, beer cheese does contain a small amount of alcohol because it’s made with beer. However, the alcohol content is typically very low because the cheese is heated during preparation which causes some of the alcohol to evaporate.
Ingredients
- butter
- all-purpose flour
- milk
- light beer – I use Miller Lite
- sharp cheddar cheese
- garlic salt
- paprika
- cayenne pepper, optional for heat
Step by step
- Melt butter in a medium saucepan over medium-high heat.
Stir in the flour and whisk for about a minute to make a roux. - While whisking, slowly add in the milk, whisking until smooth. Allow to thicken for 1-2 minutes.
- Once thickened, add the seasonings to the mixture, whisking until combined. Pour in the beer and stir.
- Next, add in ½ c of freshly shredded cheese at a time. Allow the cheese to melt before adding more. Repeat the process until all the cheese is melted.
- Remove from the heat and serve with soft pretzels!
I suggest using freshly shredded cheese, as it melts more easily and has a smoother consistency compared to store-bought cheese. Store-bought cheese often has a powdery coating to extend its freshness, which can hinder its melting quality.
Tips for best results
- Allow each addition of cheese to melt fully before adding more.
- Adjust the spices to your taste—more cayenne for heat, more garlic salt for flavor.
Variations
Change the taste of this recipe by using different beers (like our beer bread!) Heavier beers will have a more intense flavor in the cheese dip. I like to use a pumpkin ale in the autumn.
You can also mix cheddar cheese with other varieties like mozzarella, gruyere, swiss, gouda, or monterey jack to mix up the flavor or add sautéed onions, a splash of Worcestershire sauce, or dijon mustard to amp up the flavor.
Serving suggestions
I love serving beer cheese with a variety of snacks for dipping. Here are some of my favorites:
- regular pretzels, soft pretzels, and soft pretzel bites pair perfectly (or pretzel bread)
- veggie sticks like carrots, celery, and bell peppers.

Storage
Store leftover beer cheese in an airtight container into a refrigerator up to 3 days.
To reheat, warm slowly on low heat on the stovetop, stirring often, until it becomes smooth and warm. You can also microwave it in short intervals, stirring in between, until heated through.
