This Easy Beer Cheese is a creamy, flavorful dip that combines cheddar cheese, light beer, and a blend of spices. It’s perfect for dipping pretzels, bread, or veggies and takes only minutes to prepare.

- 2 tablespoons butter
- 3 tablespoons all purpose flour
- 3/4 cup milk
- 2/3 cup light beer
- 10 ounces cheddar cheese, freshly shredded
- 1 tablespoon garlic salt
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
Instructions
- Melt the butter in a medium-size saucepan over medium-high heat.
- Stir in the flour and whisk constantly for about a minute.
- While whisking, slowly add in the milk, continuing to whisk until smooth. Allow to thicken for 1-2 minutes.
- Once thickened, add in seasonings whisking until combined. Add in the beer and stir.
- Add in ½ cup of shredded cheese at a time. Allow the cheese to melt before adding more. Repeat the process until all the cheese is melted.
- Remove from the heat and serve.
Notes
I suggest using freshly shredded cheese, as it melts more easily and has a smoother consistency compared to store-bought cheese. Store-bought cheese often has a powdery coating to extend its freshness, which can hinder its melting quality.
