Poolside Dip, also called loaded creamy ranch dip, is a crowd-pleaser, offering a delicious mix of cream cheese, ranch dip seasoning, and a little heat. It’s a creamy veggie dip appetizer that’s versatile enough to pair with chips, crackers, or fresh raw veggies, making it a must-have for any outdoor gathering.

Ingredients

Step by step

  1. Cut the red pepper and jalapeño, removing stems and seeds. Dice the green onions and set aside.
  2. In a large bowl, use a hand mixer to blend the cream cheese and ranch seasoning until light and creamy.
  3. Add the diced red pepper, jalapeño, corn, and olives. Stir well.
  4. Spoon the mixture into your serving dish and top with green onions.
  5. Serve immediately or refrigerate until ready to enjoy.

  • 1 oz packet dry ranch seasoning
  • 1 red bell pepper, finely diced
  • 1 jalapeño pepper, finely diced
  • 115 oz can corn, drained
  • 14.25 oz can chopped black olives, drained
  • 2 green onions, diced, for topping

Instructions

  1. Cut the red pepper and jalapeño, removing stems and seeds. Dice the green onions and set aside.
  2. In a large bowl, use a hand mixer to blend the cream cheese and ranch seasoning until light and creamy.
  3. Add the diced red pepper, jalapeño, corn, and olives. Stir well.
