  • cooked chicken
  • melted butter
  • buffalo sauce

Step by step

  1. Preheat the oven to 450°F.
  2. Using a fork, poke holes all over your washed potatoes.
  3. Place the potatoes on a standard baking sheet with a rack over the top of it and use a basting brush to coat them entirely in melted butter.
  4. Sprinkle each potato with a bit of salt and pepper.
  5. Bake for 55 minutes or until fork tender.
  1. In a small bowl, mix together the shredded chicken and buffalo sauce.
  2. Split your potatoes and baste the inside with a bit of the leftover melted butter.
  3. Sprinkle the insides of the potatoes with a bit of salt and pepper.
  4. Place about ¼ cup of the chicken mixture into each potato.
  5. Drizzle with a bit of extra buffalo sauce, if desired, then drizzle with ranch dressing.
  6. Top each potato with about 1 tablespoon blue cheese crumbles and finish it off with about 1 tablespoon chopped green onions. Enjoy!

Tips for best results

  • The amount of ranch dressing is totally up to your preferences.
  • I use Frank’s buffalo sauce because it has the best flavor profile, in my opinion.
  • I tend to use leftover chicken from past dinners to make this, since it needs such a small amount of chicken. However, rotisserie chicken is another great option for making this a quick meal.

Serving suggestions

These loaded potatoes are a meal in themselves, but if you’re looking to round out your dinner, consider serving them with a green veggie salad or some steamed veggies on the side.

A glass of strawberry iced tea makes the perfect accompaniment to balance out the heat from the buffalo sauce.

Variations

  • swap out the buffalo sauce for BBQ sauce for a smoky twist

Storage

These potatoes are best served freshly assembled. I don’t recommend storing them with all the toppings on them.

Leftover baked potatoes can be stored in the refrigerator for up to 3 days. Make sure to wrap them tightly in foil or place them in an airtight container to maintain freshness.

When you’re ready to reheat, pop them back in the oven or microwave until warmed through. The potatoes are best enjoyed fresh, but reheating them properly can bring back their comforting texture and bold flavors.
