Why I Love This Recipe
This avocado salad is a refreshing and nutritious dish full of the flavors of fresh produce. Every bite is bursting with flavor and texture.
The simple yet delicious combination of ingredients makes it a versatile dish that can be enjoyed as a light lunch, a side dish, or a healthy snack.
Ingredients
- avocados
- cherry tomatoes
- English cucumber
- red onion
- lemon
- extra virgin olive oil
- salt and pepper
You can use grape tomatoes or small roma tomatoes as well. You can also substitute limes for the lemons without changing the flavor profile too much if thats what you have on hand.
Step by Step
- Wash all the produce. Cut the cucumber into quarters lengthwise and then dice it. Half the cherry tomatoes. Peel and chop the avocados. Thinly slice the red onions.
- Add the diced cucumber, halved cherry tomatoes, diced avocados, and sliced red onions to a large salad bowl.
- Juice the lemon and sprinkle it over the ingredients in the bowl. Drizzle the olive oil over the salad.
- Season the salad with salt and black pepper according to your taste preferences.
- Gently toss all the ingredients together until well combined, ensuring that the avocado pieces are evenly coated with lemon juice and olive oil.
- Transfer the salad to a serving dish and serve chilled.
Tips for best results
- Select ripe, juicy tomatoes, firm but ripe avocados, and crisp cucumbers for the best flavor and texture.
- Aim for uniformity in cutting your veggies, similar sized pieces help keep the flavor consistent bite to bite.
- Season your salad well with salt and pepper. This helps bring out the natural flavors of the vegetables.
Variations
You can make so many different recipe variations with this salad using different herbs and add-ins. Here are a few of my favorites:
- Make it Greek-style with red wine vinegar and feta cheese.
- Take a Mexican variation with chopped fresh cilantro and using lime juice instead of lemon.
- Make it Caprese-style with balsamic vinegar, basil, and mozzarella pearls.
Other add-in ideas are frehs herbs like dill or parsley or adding greens like arugula or baby spinach.
Serving Suggestions
This salad pairs perfectly with a variety of dishes. Serve it alongside grilled chicken or fish for a complete and satisfying meal.
Storage
Store leftover salad in an airtight container in the refrigerator for up to one day. However, keep in mind that avocados may oxidize and brown over time, so it’s best to enjoy the salad fresh.
