I love seafood, growing up on the coast in Virginia and South Carolina, and now living in coastal Georgia has made it easy for us to access fresh seafood. However, that has not always been the case as the military moved us around!

Years ago I was craving my Nana’s Crab Soup recipe and wasn’t able to get fresh crab meat at the grocery store, so I opted for surimi instead. Surimi, or imitation crab meat, is crab-flavored seafood made from wild-caught Alaska Pollock and Pacific Whiting. I promise you, you cannot tell the difference! I was hooked!

Not only does the imitation crab taste just like real crab, it is also sustainably and ethically sourced and a good source of protein with no saturated or trans fats. I’ve used it in crab cakes, crab dip, crab mac and cheese, sushi, and my husband eats just on its own as a snack!

Why I love this recipe

  • this is an easy crab bisque that can be on the table in less than 30 minutes
  • its a flavorful soup that even picky eaters like, if you have seafood lovers in your house, this is the recipe for you!
  • using imitation crab meat instead of fresh lump crab meat makes it a very inexpensive meal

Ingredients

This homemade soup recipe is super easy with simple ingredients, so don’t be afraid to try it! In just 20 minutes you have thick, creamy crab soup-the ultimate comfort food! Best of all, there are no crazy complicated ingredients:

  • imitation crabmeat
  • unsalted butter
  • diced yellow onion
  • all-purpose flour
  • heavy cream
  • milk
  • Worcestershire sauce
  • Old Bay Seasoning
  • cooking sherry
ladle of crab soup over pot

Step by step

  1. Melt butter in a large pot or Dutch oven. Add onions and sauté over medium heat until translucent.
  2. Add flour and stir with a wooden spoon to coat the onions and allow it to cook for one minute.
  3. Stir in heavy cream and milk.
  4. Add the remaining ingredients and simmer until the soup thickens, about 15 minutes.
  5. Season with salt and pepper to taste. I find the best flavor by adding a little salt and white pepper to my soup.
  6. Garnish with sliced green onions if desired and serve hot.

That’s it! Delicious crab soup made with imitation crab in just 20 minutes!

Tips for best results

  • For extra creamy broth use whole milk when possible.
  • If the soup is too thick for your taste you can thin it with chicken broth, seafood stock, or vegetable broth. Beef broth will affect the color of the soup but tastes fine.

  1. Had to add a little more seasoning. Julio’s seasoning, salt, ground pepper, soy sauce, garlic. And added some vegetable broth. Used corn starch instead of flour. Really good. Thank you for the recipe.
