Why I love this recipe

  • combines the chewy texture of cookies with the chocolatey richness of brownies.
  • utilizes pantry staples that are likely already in your kitchen.
  • perfect for parties, bake sales, or a night in with family.
  • engaging and easy enough to involve kids or baking beginners.

Ingredients

brownie cookie ingredients in glass bowls
  • semisweet chocolate chips
  • butter
  • eggs
  • white granulated sugar
  • brown sugar
  • vanilla extract
  • baking powder
  • salt
  • all-purpose flour
  • unsweetened cocoa powder

Step by Step

  1. In a saucepan, melt the butter over low heat. Once melted, add in the first cup of chocolate chips and stir until melted and smooth.
  2. In a mixing bowl, add the melted chocolate mixture and sugars. Mix until well combined.
  3. Crack in the eggs and add the vanilla extract. Mix until fully incorporated.
  4. Fold in the baking powder, flour, salt, and cocoa powder until a thick dough forms.
  5. Stir in the remaining chocolate chips until evenly distributed throughout the dough.
  6. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
  7. Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  1. Using a 2-inch scooper, portion out balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. You should fit about 8 cookies per sheet.
  2. Bake in the preheated oven for 11-13 minutes, or until the tops of the cookies are crinkly and the edges are firm.
  3. Allow the cookies to cool on the baking sheet for at least 5 minutes before serving. These brownie cookies are best enjoyed warm and gooey!

Tips for best results

  • make sure to chill the dough; this step is crucial for getting the perfect texture
  • don’t over bake; removing them from the oven while slightly underdone will keep them fudgy
  • use high-quality chocolate for richer flavor and smoother melting
  • allow the cookies to cool on the baking sheet to set properly before indulging

Variations

  • swap out semisweet chocolate chips for white chocolate or peanut butter chips.
  • add nuts like walnuts or pecans for a crunchy texture.
  • stir in a pinch of cinnamon or chili for a surprising flavor twist.
  • experiment with mint or orange extract instead of vanilla for a fresh, unique taste.

Serving suggestions

The best thing about brownie cookies is how well they pair with other comfort foods. Serve them fresh from the oven with a scoop of vanilla ice cream for a classic combo, or drizzle them with caramel for an extra touch of decadence.

They are also perfect for dunking in a glass of cold milk or, for the adults, alongside a cup of strong coffee to balance the sweetness.

Whatever you choose, these cookies make dessert or snack time so much better.

Storage

To keep your brownie cookies fresh and gooey, store them in an airtight container at room temperature for up to 5 days. If you want to extend their shelf life, you can also freeze them for up to 3 months.
