Ingredients

  • 5-6 potatoes – Yukon golds, red, or russet potatoes
  • 1/2 onion
  • bell pepper, any color
  • extra virgin olive oil
  • seasoned salt (I like Lawry’s)
  • kosher salt
  • black pepper
  • paprika
  • onion powder
  • garlic powder

Step by step

  1. Wash and pat dry the potatoes.
  2. Cut the potatoes in half, then into 1-inch cubes, and place them in a bowl.
  3. Slice the peppers and onions, then add them to the bowl.
  4. Pour olive oil over everything and add all the seasonings.
  5. Use your hands to toss everything together, then transfer to a baking dish.
  6. Cover with foil and bake at 400°F for 40 minutes, stirring halfway through cooking.
  7. Remove the foil and bake for an additional 5-10 minutes until they reach your desired level of doneness.

Ingredients

  • 56 gold, red, or russet potatoes
  • 1/2 onion, sliced, any type of onion
  • 2 bell peppers, any color
  • 34 tablespoons extra virgin olive oil
  • 2 teaspoons seasoned salt
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Wash potatoes and pat dry.
