Ingredients
- 5-6 potatoes – Yukon golds, red, or russet potatoes
- 1/2 onion
- bell pepper, any color
- extra virgin olive oil
- seasoned salt (I like Lawry’s)
- kosher salt
- black pepper
- paprika
- onion powder
- garlic powder
Step by step
- Wash and pat dry the potatoes.
- Cut the potatoes in half, then into 1-inch cubes, and place them in a bowl.
- Slice the peppers and onions, then add them to the bowl.
- Pour olive oil over everything and add all the seasonings.
- Use your hands to toss everything together, then transfer to a baking dish.
- Cover with foil and bake at 400°F for 40 minutes, stirring halfway through cooking.
- Remove the foil and bake for an additional 5-10 minutes until they reach your desired level of doneness.
Slow Cooker Instructions: To make these in the crock pot cook on high for 2 hours or low for 4 hours.
