Description
These easy breakfast potatoes are a combination of crispy, golden-brown chopped potatoes, savory onions, and sweet bell peppers. Tossed in olive oil and seasoned to perfection, they are baked until crisp, tender, and flavorful.

- 5 – 6 gold, red, or russet potatoes
- 1/2 onion, sliced, any type of onion
- 2 bell peppers, any color
- 3–4 tablespoons extra virgin olive oil
- 2 teaspoons seasoned salt
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- Wash potatoes and pat dry.
- Cut the potatoes in half, then into 1-inch cubes, and place them in a large bowl.
- Slice the pepper and onions, then add them to the bowl.
- Pour olive oil over everything and add all the seasonings.
- Use your hands to toss everything together and trasnfer to a baking dish.
- Cover with foil and bake at 400°F for 40 minutes, stirring halfway through.
- Remove the foil and bake for an additional 5-10 minutes until they reach your desired level of doneness.
Notes
- To make in the slow cooker cook on high for 2 hours or low for 4 hours.
- Reheat leftovers in the oven or in a skillet to keep them crispy.
