Description

These easy breakfast potatoes are a combination of crispy, golden-brown chopped potatoes, savory onions, and sweet bell peppers. Tossed in olive oil and seasoned to perfection, they are baked until crisp, tender, and flavorful.


Ingredients

Scale
  • 56 gold, red, or russet potatoes
  • 1/2 onion, sliced, any type of onion
  • 2 bell peppers, any color
  • 34 tablespoons extra virgin olive oil
  • 2 teaspoons seasoned salt
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Wash potatoes and pat dry.
  2. Cut the potatoes in half, then into 1-inch cubes, and place them in a large bowl.
  3. Slice the pepper and onions, then add them to the bowl.
  4. Pour olive oil over everything and add all the seasonings.
  5. Use your hands to toss everything together and trasnfer to a baking dish.
  6. Cover with foil and bake at 400°F for 40 minutes, stirring halfway through.
  7. Remove the foil and bake for an additional 5-10 minutes until they reach your desired level of doneness.

Notes

  • To make in the slow cooker cook on high for 2 hours or low for 4 hours.
  • Reheat leftovers in the oven or in a skillet to keep them crispy.
