Step by step

  1. Halve your avocado and use a spoon to scoop out about half of the flesh to create space for the egg.
  2. Place the avocado halves on a baking sheet or secure them in a muffin tin for stability. Crack an egg into each half (it is normal if some of the egg white overflows).
  3. Sprinkle the top with shredded cheese and crumbled bacon, then bake for 20-30 minutes or until the eggs are cooked to your preference.
  4. Season with salt and pepper. Serve and enjoy!

Tips for best results

  • Use room temperature avocados: This makes it easier to scoop out the flesh and helps everything cook evenly.
  • To avoid the egg overflowing you can always crack the egg into a small bowl first and use a spoon to transfer just the right amount into the avocado.
  • Scoop wide, not deep: When removing some of the avocado flesh, scoop out a tablespoon and keep it shallow so the egg bakes evenly.
  • Muffin tin trick: set the avocado halves in a muffin tin to keep them from tipping over.

Variations

Switching out toppings based on your preferences. You can try using shredded cheddar cheese, feta cheese, or goat cheese, Canadian bacon, or diced ham to customize it.

If you like things spicy, a dollop of salsa verde or pico de gallo on top is delicous or you can add some fresh chives or green onion on top as well. The possibilities are endless!

Serving suggestions

This can easily be a meal on its own but if you want to add a side toast, breakfast potatoes, corned beef hash, or a fruit salad like our watermelon mint salad are all great additions.

Storage

For the best flavor and texture, enjoy this dish fresh. If you happen to have leftovers, store them in the fridge in an airtight container for up to a day. Keep in mind the avocado will brown over time, so try to eat it as soon as possible. Reheat in the oven or microwave.
