I love baked beans but sometimes I don’t want to make them completely from scratch and take the time to soak the beans and boil them. I also don’t want to settle for the “meh” flavor of canned baked beans either, so what’s a girl to do?

Ingredients

  • sweet onion
  • bell pepper
  • garlic cloves
  • smoked paprika
  • chili powder
  • salt
  • black pepper
  • apple cider vinegar
  • BBQ sauce (I used Sweet Baby Ray’s BBQ Sauce)
  • dijon mustard
  • brown sugar
  • baked beans (I used Bush’s original)

Step by step

  1. Preheat oven to 400°F.
  2. In a large oven-safe skillet or dutch oven, brown the bacon until crispy over medium heat.
  3. Add onion, bell pepper, and garlic to the pan. Cook, stirring often,  for 5 minutes or until vegetables are soft.
  1. Add paprika, chili powder, and salt and pepper to the veggies. Stir and cook an additional minute. 
  2. Add vinegar, barbecue sauce, brown sugar, and mustard. Stir to combine. Add beans (undrained) and stir to mix. Bring to a simmer then turn off the heat. 
  3. Taste the beans and add additional seasoning if desired.
  4. Bake uncovered for 30 minutes.

  • Don’t drain the beans; the liquid adds to the sauce’s richness.
  • Taste and adjust the seasoning before baking.
  • Let the beans rest for a few minutes before serving to allow the flavors to meld.

Variations

To change things up a bit, consider adding diced jalapeños for a spicy kick or a splash of bourbon or Worcestershire sauce for a more robust flavor. You can increase the sweetness by adding a touch of maple syrup or molasses to the mixture or increasing the amount of brown sugar to taste.

  • 2 sliced bacon, diced, plus extra for topping if desired
  • 1 small sweet onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tablespoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper
  • 2 tablespoons apple cider vinegar
  • 4 tablespoons BBQ sauce (I used Sweet Baby Ray’s BBQ Sauce)
  • 1 tablespoon dijon mustard
  • 1 tablespoon brown sugar
