Description

Baked beans are a mix of smoky bacon, tender beans, and a sweet and tangy sauce. Baked to perfection, they make the ideal side dish for any occasion.


Ingredients

  • 2 sliced bacon, diced, plus extra for topping if desired
  • 1 small sweet onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tablespoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper
  • 2 tablespoons apple cider vinegar
  • 4 tablespoons BBQ sauce (I used Sweet Baby Rayโ€™s BBQ Sauce)
  • 1 tablespoon dijon mustard
  • 1 tablespoon brown sugar
  • 2 (28-ounce) cans baked beans (I used Bushโ€™s original)

Instructions

  1. Preheat oven to 400ยฐF.
  2. In a large oven-safe skillet or dutch oven, brown the bacon until crispy over medium heat.
  3. Add onion, bell pepper, and garlic to the pan. Cook, stirring often,ย  for 5 minutes or until vegetables are soft.
  4. Add paprika, chili powder, and salt and pepper to the veggies. Stir and cook an additional minute.ย 
  5. Add vinegar, barbecue sauce, brown sugar, and mustard. Stir to combine. Add beans (undrained) and stir to mix. Bring to a simmer then turn off the heat.ย 
  6. Taste the beans and add additional seasoning if desired.
  7. Bake uncovered for 30 minutes.
