You don’t need a smoker to make delicious ribs, you can easily make them on your gas grill with our step-by-step tutorial.

Getting Started: Prepping Your Grill

First things first, fire up that gas grill of yours. We’re going to be using the indirect heat method for cooking our ribs, so turn on the burners on one side of the grill to low to medium heat while leaving the other side off. This creates a zone of indirect heat, which is perfect for slow cooking our ribs to perfection.

Close the lid and allow the temperature inside the grill to rise. Aim for a grill temperature between 225 and 250 degrees Fahrenheit.

If you’re using wood chips for added flavor, soak them in water for about half an hour before adding them to your grill. Place a handful of soaked wood chips in a smoker box or wrap them in aluminum foil to create a foil packet. Then, place the packet directly on the hot side of the grill.

Prepping the Ribs

Now, let’s talk ribs. You’ve got a few options here, but for this recipe, we’ll be using a rack of baby back ribs. Start by removing the silver skin (if present) from the back of each rack of ribs. This can be a bit tricky, use a sharp knife to pierce the skin and your fingers to peel it away from the meat.

Once the silver skin is removed, season the ribs.

One hour into the cook time, give your ribs a quick check. They should be developing a nice bark on the outside, and the meat should be starting to pull away from the bones. If you notice any areas that are cooking too quickly, rotate the ribs around on the grill to ensure even cooking.

At the two hour mark, remove the ribs and wrap them tightly in heavy-duty aluminum foil, then return to the grill for an additional 30 minutes.

If desired you can unwrap the ribs and brush with the barbecue sauce, then return to the grill for 5-10 minutes to allow the sauce to caramelize.

Checking for Doneness

It’s essential to check the internal temperature of your ribs to ensure they’re cooked to perfection. You’re looking for an internal temperature of around 190-203 degrees Fahrenheit for tender ribs that are falling off the bone.

Carefully insert an instant-read thermometer into the thickest part of the meat, being careful not to touch the bone. Once you’ve reached the desired temperature, you can brush on your favorite barbecue sauce and let it caramelize on the grill for a few minutes if desired.

Finishing Touches and Serving

Transfer the ribs to a cutting board and let them rest for at least 15 minutes before slicing them into individual portions.

Instructions

  1. Allow ribs to rest at room temperature for 30 minutes.
  2. Preheat one half of the grill to medium low heat. Close lid and allow to rise to a temperature between 225-250 degrees Fahrenheit, adjusting the heat as needed.
  3. Remove the silver membrane from the back of the ribs if present using a sharp knife to pierce the membrane and your fingers to peel it away from the meat.
  4. Brush the ribs with yellow mustard and coat generously with the dry rub on all sides. 
  5. Place the ribs on the side of the grill with no burners on. Cook for one hour. At the one hour mark check the ribs and rotate as needed to cook evenly.
  6. Cook an additional hour. At the two hour mark remove the ribs from the grill and wrap tightly in heavy-duty aluminum foil. Return to the grill for an additional 30 minutes. Check for doneness, the meat should be between 190-205 degrees.
  7. If desired remove ribs from foil, brush with barbecue sauce and allow to cook for 5-10 minutes to caramelize the sauce.
  8. Allow ribs to rest for 15 minutes before cutting and serving.
