Reuben dip is one of those irresistible, cheesy, and downright delicious snacks that always disappear fast! If you love the flavors of a classic Reuben sandwich, this dip brings all that goodness into a warm, melty, scoopable bite.

Why I love this recipe

This easy party dip takes everything I love about a Reuben slider and makes it even more irresistible. The gooey cheese, savory corned beef, and tangy sauerkraut blend for the perfect bite. It’s super easy to throw together, and it’s always a crowd-pleaser at every potluck or party I take it to.

Ingredients

  • cream cheese
  • deli sliced corned beef brisket – you can also use leftover stovetop corned beef and cabbage or Instant Pot corned beef, just slice/chop the brisket finely so it incorporates into the dip.
  • Swiss cheese
  • sauerkraut
  • sour cream
  • Thousand Island dressing
  • green onions
  • crackers, chips, or bread for serving

Step by step

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, beat the cream cheese until smooth.
  3. Add the corned beef, shredded cheese, sauerkraut, sour cream, and dressing, and mix until well combined.
  1. Spray a small baking dish or pie plate with non-stick spray, and spread the dip mixture into the bottom of the pan.
  2. Bake for 15-20 minutes, until the cheese is melted, bubbly, and golden brown in spots.
  3. Serve warm with crackers, crusty bread, or your favorite dippers.

Tips for best results

  • Drain the sauerkraut well. Press out excess moisture with a paper towel to keep the dip from getting watery.
  • Use freshly shredded Swiss cheese. It melts better and has a richer flavor than pre-shredded cheese.
  • Serve immediately. The dip is best enjoyed hot and fresh out of the oven. If serving while entertaining you can keep the dip warm by transferring it to a slow cooker set to warm.

Variations

If you are thinking of a twist, pastrami adds a nice smoky touch, and Swiss mixed with cheddar gives extra cheesiness. A bit of horseradish or hot sauce adds heat if you like spice. If you prefer something other than Thousand Island, Russian dressing is just as tasty.

Serving suggestions

Reuben dip goes great with all kinds of dippers! I like it with Triscuits or rye bread or crackers for that classic sandwich vibe, but crusty baguette slices, pretzels, pretzel bread, tortilla or rye chips work just as well. If you’re keeping it low-carb, celery sticks, bell pepper strips, or cucumber slices are great choices.

Storage

Keep leftover reuben dip in an airtight container in the fridge for up to three days. Reheat in the microwave or oven.

I do not recommend freezing this dip as the texture is altered upon thawing.
