I never thought I’d get this excited about cauliflower until I discovered this cauliflower bite recipe that pairs beautifully with a cool dill sauce. I’ve served them at family dinners, game nights, and casual get-togethers, and they always disappear fast.

Ingredients

For the Cauliflower Bites:

  • cauliflower florets
  • all-purpose flour
  • cornmeal
  • eggs
  • spices: garlic powder, smoked paprika, black pepper, and salt

For the sauce:

  • plain yogurt
  • grated garlic
  • fresh dill
  • salt

Step by step

  1. In a medium-sized bowl, stir together the yogurt, dill, garlic, and salt to taste. Set it aside in the fridge while you prepare the cauliflower bites.
  2. Break the cauliflower into florets. Bring a pot of water to a boil, then add the florets. Cook just until they are slightly tender, but do not overcook them.
  3. Heat a deep pan with your preferred cooking fat (vegetable oil or lard) to around 330°F.
  1. In a shallow dish, combine the flour and cornmeal. In another dish, beat the eggs. Mix spices and salt into the flour mixture.
  2. Take each cauliflower floret and coat it in the flour mixture first, then dip it into the egg, and finally coat it with the cornmeal.
  3. Fry the florets for 1 to 2 minutes on each side until they turn golden brown.
  4. Serve warm on a plate, garnished with fresh dill, alongside the chilled yogurt sauce.

How to cook in the air fryer or oven

You can cook these crispy cauliflower bites in the air fryer or oven if you prefer a lighter option.

For the air fryer, set it to 375°F and cook the coated florets for about 12–15 minutes until golden and crispy. If using the oven, preheat to 425°F and bake for 20–25 minutes, flipping halfway through to ensure they get evenly crispy.

Be sure to keep an eye on the bites while they cook as the cook time can vary depending on your oven/air fryer and the size of the florets. Take them out when golden brown.

Tips for best results

  • Boil the cauliflower until just slightly tender, and avoid overcooking since it will continue cooking during frying.
  • Make sure your oil temperature stays around 330°F for perfectly crispy bites that aren’t greasy.
  • Let the coated florets rest for a minute before frying to help the coating adhere better.
  • Use fresh dill for the best flavor because dried dill doesn’t have the same bright, fresh taste.

Serving suggestion

I like to serve these cauliflower bites as a dinner side with proteins that cook in the oven like oven baked pork chops, baked chicken thighs, or tri-tip steak so that I can fry them up while the meat bakes in the oven.

Storage

Like most fried foods, these cauliflower bites are best enjoyed fresh and hot. However, if you do have leftovers, store them in an airtight container in the refrigerator for up to 2 days.

When serving, reheat in a 375°F oven or air fryer for about 10 minutes to keep them crispy. The yogurt sauce can be kept in the fridge for up to 3 days.

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour
  • 1 cup cornmeal
  • 3 eggs
  • 1 teaspoon garlic powder

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

For the sauce:

  • 2 cups plain yogurt
  • 2 garlic cloves, grated
  • 1 small bunch of fresh dill chopped
  • salt to taste

Instructions

  1. In a medium bowl, combine yogurt, dill, garlic, and salt to taste. Mix well and refrigerate while you prepare the cauliflower bites.
  2. Break the cauliflower into florets. Heat a large pot of water until it boils.
  3. Add the cauliflower and cook until slightly tender. Drain and allow to dry.
  4. Heat a deep pan with your choice of fat (vegetable oil or lard) to about 330F.
  5. Pour the flour and cornmeal each into a shallow dish or plate. Add the garlic powder, paprika, salt, and pepper to the flour and mix.
  6. In a bowl or deep dish, beat the eggs until uniform.
  7. Roll each cauliflower floret first in the flour, then in the egg, and finally in the cornmeal.
  8. Fry on each side for 1-2 minutes or until golden brown.
  9. Serve warm. Sprinkle with fresh dill and serve with the yogurt sauce.
