There’s something about a good dip that brings people together like nothing else. Cowboy corn dip hits that sweet spot between simple and special, the flavor is amazing while being one of the easiest recipes I’ve ever made to prep!
Every time I bring this to a gathering, it gets passed around the table and disappears way too fast!
Why I love this recipe
I don’t have to spend hours in the kitchen to impress a crowd. Just mix everything in a bowl and it’s ready to go. I also like that I can serve it two ways: chilled for a refreshing dip or baked for a cozy, gooey version.

Ingredients

- sweet corn
- black beans
- mayonnaise
- cheeses: cream cheese, mild cheddar, mozzarella, and Parmesan cheeses
- jalapeño
- thick-cut bacon
- red onion
- salt and black pepper
- green onion
Step by step

- In a large bowl, combine corn, black beans, mayonnaise, cream cheese, cheddar, mozzarella, parmesan, jalapeño, bacon, onion, salt, and pepper. Mix until well combined.
- To serve cold simply transfer to a serving dish, garnish with green onions if you like. To enjoy this dip warm, transfer it to a baking dish safe for the oven. Bake at 350°F for about 20 minutes, then finish under the broiler for 1 to 2 minutes to get a bubbly, melted cheese topping. Serve with tortilla chips or crackers.

Tips for best results
- Top with fresh green onions for a pop of color and a burst of fresh flavor.
- Use thick-cut bacon for extra crunch and a richer, smoky taste.
- Remove jalapeño seeds carefully to keep the spice level balanced.
- Soften the cream cheese ahead of time for easier, creamier mixing.
- If baking the cowboy corn dip, keep a close eye on the broiler to melt the cheese perfectly without burning it.

Variations
I love how easy it is to customize this dip. Substituting the cheddar or mozzarella cheese with pepper jack cheese gives it a little more heat, while Greek yogurt instad of mayonnaise makes it lighter and tangier. And if I have extra veggies on hand, I’ll throw in chopped bell peppers for extra crunch.

Serving suggestions
This dip always disappears fast at parties. I usually put it out with tortilla chips and crackers, but it’s just as good with veggie sticks. I’ve also used it as a sandwich spread, and it’s delicious!
Storage
Keep any leftover cowboy corn dip in a sealed container in the fridge for up to three days. If you made the warm version, just reheat it in the microwave or oven until warmed through. It’s just as tasty the next day.
