Why I love this recipe
I can’t get enough of these Reuben sliders! They are quick to make, packed with bold flavors, and always a hit.
The salty corned beef, gooey cheese, and tangy sauerkraut all come together in the best way. A little buttery crispness on top seals the deal. Whether it’s a party, a lazy dinner, or a game day snack, these never last long!

Ingredients
- Hawaiian Rolls
- deli sliced corned beef
- Swiss cheese
- Thousand Island dressing
- sauerkraut
- butter
- Worcestershire sauce
- garlic powder
- everything bagel seasoning – you can substitute poppy seeds instead if desired
Step by step
- Preheat your oven to 350°F.
- Slice the Hawaiian rolls in half and place the bottom halves in a 9×13-inch baking dish.
- Spread a layer of Thousand Island dressing over the rolls.
- Add half of the Swiss cheese in an even layer. Spread the sauerkraut evenly on top, then layer the corned beef over the sauerkraut.
- Add the remaining Swiss cheese, then place the top halves of the rolls over the layers.
- Melt the butter in a microwave-safe bowl and stir in the Worcestershire sauce and garlic powder.
- Brush the melted butter mixture over the tops of the rolls, then sprinkle with everything bagel seasoning.
- Bake for 20-25 minutes, until the cheese is melted and the tops are golden brown.
Tips for best results
- Press out excess moisture from the sauerkraut so the sliders don’t get soggy.
- Layer evenly to ensure every bite has a perfect balance of flavors.
- Cover loosely with foil if the tops start to brown too quickly while baking.
- Let them rest for a few minutes before serving so they hold together better.
Variations
Feel like mixing things up? Go with rye bread or pretzel slider buns for a more traditional Reuben taste. If you want a bolder flavor, swap the corned beef for pastrami. Not into Thousand Island? Russian dressing is a solid pick, or stir in some Dijon mustard for extra tang.
Serving suggestions
Whether you’re serving them for a party, lunch, or dinner, Reuben sliders go with just about anything. Keep the theme going with Reuben dip or try other crowd-pleasing appetizers like beer cheese dip, Alabama fire crackers, or sweet and spicy meatballs.
Storage
These sliders are best enjoyed fresh but if you have leftovers, store them in an airtight container in the fridge for up to three days. Reheat them in a 300°F oven for about 10 minutes to get them crispy again. Avoid the microwave. It will turn the rolls mushy.
