While you know we like good dip recipes around here (hello artichoke dip, buffalo chicken dip, and reuben dip!) this is a classic, simple dip recipe we just call “football dip” at our house because it’s a staple almost every weekend of the season!

Ingredients

- pork sausage
- Rotel tomatoes with green chiles
- Velveeta cheese
- cream cheese
Step by step
- In a large skillet, cook the sausage until browned, breaking it up into small crumbles as it cooks.
- Once the pork sausage is fully cooked, drain any excess grease and return the sausage to the pan.
- Pour in the drained Rotel, then add the Velveeta and cream cheese.
- Stir frequently over medium heat until the cheeses melt completely and the mixture is bubbly.
- Let it cool slightly, then serve warm with tortilla chips or scoops.




Tips for best results
- Drain the Rotel well. Extra liquid will make your dip too thin, so I always give it a good shake in the strainer.
- Keep the heat at medium. Too high and the cheese can separate or burn on the bottom, so I watch it carefully.
- Stir constantly once you add the cheese. This prevents sticking and ensures a smooth, creamy texture.
- Serve it warm. This football dip is best enjoyed hot and bubbly, so keep it on a warming tray or in a slow cooker set to warm.

Variations
For a spicier kick, swap regular Rotel for the hot version or add a diced jalapeรฑo to the pan with the sausage. When you want a bit more depth, brown some diced onions and minced garlic with the meat.
If you donโt have pork sausage, ground beef or turkey works just as well. To make the dip more filling, I occasionally stir in black beans or corn.

Serving suggestion
This football dip is best served warm with tortilla chips or corn chip scoops, and it also pairs well with sliced vegetables like bell peppers, carrots, or celery.
If you’re planning to serve it at a party, you can make the football dip a few hours ahead and keep it warm in a slow cooker on the low setting.
Storage
Refrigerate leftover football dip in an airtight container for up to three days. Reheat in the microwave in 30 second intervals stirring between each.
I don’t recommend freezing this dip since dairy-based recipes can separate when thawed.
