Life is busy for us all right? So it was out of necessity with juggling kids’ school and extracurriculars that I recently discovered how to make rice in a slow cooker. I had a particularly hectic day and needed to figure out a way for our family of 5 to be able to have dinner at a variety of different times, ready on demand.
I decided on Beef and Broccoli in the Instant Pot but needed to make rice to go with it…enter the slow cooker!
After minimal trial and error, I discovered just how easy and fail-proof the crockpot method was! I was able to set the rice before the afternoon craziness and dinner was ready when everyone got home at their respective times, no rice cooker or stove top time required. Winning!
Ingredients
- white rice
- white water
- butter, olive oil, or nonstick cooking spray
- salt
Step by step
This is too easy, and WAY better than hovering over the stove for 30 minutes!
Simply grease the slow cooker with butter or spray with a nonstick spray, then add the water, salt, and rice. Set the slow cooker to low and cook for 2 1/2 hours. Fluff with a fork and serve. Easy-peasy!
Tips
- Always rinse the rice until the water is clear before cooking to remove excess starch.
- If you are using brown rice the cooking time may need to be longer.
- Substitute chicken broth or beef broth for the water for more flavor.
- Remove the rice from the slow cooker after it is done to avoid over-cooking.
- You can double or triple the recipe by always using the ratio of one cup of rice to two cups of water…cooking time may be longer for large batches depending on your crock pot.
A note on slow cookers…
I do want to mention that I’ve noticed a good bit of variability in slow cookers. I recommend trying this recipe for the first time in a non-urgent setting (like not when entertaining a crowd or in a time crunch!)
If your slow cooker doesn’t heat or hold heat as well it may take longer to cook, and some cookers benefit from you giving the rice a stir midway through cooking if they cook unevenly.
Serving suggestions
There are so many options when it comes to what to serve with white rice, like 20 Minute Garlic Herb Chicken, Baked Chicken Tenderloins, or Turkey Swedish Meatballs. I personally love anything with gravy over rice: honey garlic chicken, stovetop pot roast, slow cooker pot roast, (or just pot roast gravy), chicken and dumplings, and Mississippi pot roast are great options. You can also make a big batch and freeze portions for easy thawing later on.
