We are solidly in my “slow cooker recipes every night phase” of the year. With school and after-school activities making for busy weeknights, I’m living off of crock pot recipes that make dinner a breeze.
Like our slow cooker pot roast and stovetop pot roast, this slow cooker Mississippi pot roast recipe is a family-friendly meal even picky eaters will enjoy. What makes easy Mississippi Pot Roast one of my favorite recipes is its melt-in-your-mouth tender beef and bold flavor profile.
The combination of zesty ranch mix, savory au jus mix, and tangy peppers creates so much flavor that’s both comforting and irresistible. Whether served over mashed potatoes with pot roast gravy, accompanied by roasted vegetables, or sandwiched between crusty bread, this juicy pot roast is a testament to the power of simple ingredients and timeless comfort food.
Why I love this recipe
- 5 simple ingredients
- literally a dump-it-and-forget-it meal
- leftovers reheat well so it tastes just as good the next day
Why is it called Mississippi pot roast?
While its exact origins are a bit elusive, the recipe gained widespread popularity in the early 2000s, thanks in part to a viral sensation on social media.
It is said that the dish originated in a small Mississippi town, where a resourceful home cook concocted this savory delight with 5 simple ingredients. I’ve also heard it called Mississippi Mud Roast. Regardless of what we call it, this is one of the most delicious pot roast recipes I’ve tried!
Ingredients
- beef chuck roast
- pepperoncini peppers
- butter
- au jus gravy mix
- dry ranch dressing mix
Substitutions
If you can’t find a packet of au jus gravy mix you can substitute brown gravy mix. You may also use banana peppers instead of pepperoncini peppers if needed.
Step by step
This has to be the easiest pot roast recipe out there!
- Add the beef to the slow cooker. Pour the pepperoncini and juice over it then sprinkle with both the ranch seasoning mix and gravy mix. Cut the stick of butter into slices and place on top of the roast and cook on low heat for 8-10 hours.
- Shred the meat with two forks before serving.
Tip: Use a slow cooker liner to make cleanup a breeze!
Serving suggestions
There are a ton of options when it comes to what to serve with pot roast. I serve this over mashed potatoes or egg noodles but you could use rice or even cauliflower rice if you prefer. I also like to pair it with a vegetable side dish like sautéed green beans, broccoli, or corn and garlic bread for dipping in the tasty pot roast gravy.
Storage
Store leftovers in an airtight container for up to 3 days. Reheat in the microwave.
Freeze in a freezer bag or freezer-safe container (affiliate link) for up to 3 months.
