We make a loaf of banana bread at least a few times a month, it’s a super fast recipe that is easy enough for even my elementary-aged son to make. If you have overripe bananas you probably have all the ingredients you’ll need already on hand!
This recipe is the perfect way to use up extra bananas and have a sweet treat in the process. Enjoy a slice of banana bread for breakfast with your morning coffee, a tasty afternoon snack but also sweet enough for dessert!
Why I love this recipe
This recipe is so easy! You can whip it up in one bowl by hand, no electric mixer required, making clean up a breeze.
This is a variation of my classic banana bread recipe which (in my opinion) is literally the best banana bread out there!
It’s also perfectly sweet, the mashed bananas give it the perfect sweet flavor and the final texture of the bread is moist and fluffy.

Ingredients
- ripe bananas
- unsalted butter
- egg
- vanilla extract
- baking soda
- flour
- sugar
- salt
- chocolate chips
- chopped walnuts
Step by step
- Preheat the oven and prep a loaf pan with nonstick spray.
- Mash ripe bananas in a large bowl.
- Add melted butter and egg and stir to mix.
- Add vanilla, baking soda, flour, sugar, and salt to the banana mixture. Mix thoroughly.
- Fold in chocolate chips and walnuts.
- Pour batter in the greased loaf pan and bake for one hour or until a toothpick inserted in the middle comes out clean. Let the bread cool on a wire rack 5 minutes before slicing.
Variations
- make these as banana muffins instead, baking time will be reduced
- use dark chocolate chips, peanut butter morsels, or milk chocolate instead of semi-sweet chocolate chips
- substitute chopped pecans for the walnuts
- add a few extra chocolate chips to the top of the bread before baking for a pretty presentation!
Storage
Store the bread wrapped in plastic wrap or in an airtight container at room temperature up to 5 days.
To freeze the bread wrap it tightly in aluminum foil and then store in a freezer bag. You can freeze the whole loaf, half a loaf, or individual slices this way. The bread is best eaten within 3-4 months. Thaw frozen bread at room temperature.

- 1/3 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 3/4 cup sugar
- 1 1/2 cups all purpose flour
- pinch of salt
- 1 cup semisweet chocolate chips
- 1 cup chopped walnuts
Instructions
- Preheat oven to 350 degrees Fahrenheit and spray a loaf pan with nonstick spray.
- In a large bowl, thoroughly mash ripe bananas.
- Add melted butter and mix.
- Add egg and vanilla and stir to mix.
- Add baking soda, sugar, flour, and salt. Mix well.
- Fold in chocolate chips and walnuts.
- Pour batter in the prepared pan and bake one hour or until a toothpick inserted in the middle comes out clean.

I wanted a double batch so I doubled every thing but it was already on 2X. At 6 cups flour, 3 cups sugar, 4 eggs it was too dry to mix. I ended up putting 2 sticks of butter in and 1/2 cup of oil in order to get it to mix. I used 17 oz chocolate chips and 2 cups chopped walnuts. Waiting to see how the 3 large loafs turn out.

when is the butter supposed to be added?
Yea I also got through the whole recipe and then realized I never used the butter because it’s not in the instructions! I had it all mixed together and ended up just throwing it in at the end… let’s see how it turns out!
SOOO sorry, I fixed it! It should turn out fine no matter when you added it!
