Gnocchi with Bacon and Tomatoes is a comforting and indulgent dish, perfect for a cozy dinner or festive holiday meal. The crispy bacon and juicy tomatoes complement the soft gnocchi, creating a meal that feels special but is easy to prepare.

Ingredients

  • potato gnocchi
  • bacon
  • yellow onion
  • garlic cloves
  • cherry tomatoes
  • Parmesan cheese
  • olive oil
  • fresh herbs – dill, oregano, parsley, and basil
  • spices – cumin, salt, and pepper

Step by step

  1. Bring a large pot of water to a boil. Once boiling, add the potato gnocchi and cook according to the package instructions. Drain and set aside in the pot.
  2. Heat olive oil in a pan over medium heat. Sautรฉ the diced onion and chopped garlic, cooking for 2-3 minutes until the onion softens.
  3. Add the quartered cherry tomatoes, salt, pepper to taste, and fresh oregano. Cover the pan with a lid and cook for 3-4 minutes until the tomatoes are soft. Add the mixture to the pot of gnocchi.
  1. In the same pan, brown the bacon pieces, frying until golden, about 4-5 minutes. Add to the pot of gnocchi and tomato mixture.
  2. In a food processor, combine the dill, parsley, fresh basil, the remaining olive oil, a pinch of salt, and the remaining clove of garlic. Blend briefly until the herbs are finely chopped. (You can also chop them by hand if you prefer.)
  3. Stir in the fresh herb mixture with the pot of gnocchi, ensuring everything is well combined.
  4. Serve with Parmesan cheese if desired.

Tips for best results

  • Use fresh herbs for the best flavor. Dried herbs work but wonโ€™t have the same freshness.
  • Cook the bacon until crispy for the best texture.
  • Donโ€™t overcook the gnocchi follow the package instructions for perfect texture.

Variations

Make it your own! Bacon is great, but pancetta or sausage? So good!

Toss in some spinach or arugula for extra greens, or go for sun-dried tomatoes if you love that deep tomato flavor.

Keep your gnocchi fresh by storing it in an airtight container in the fridge for up to three days. When itโ€™s time to reheat, a quick toss in a skillet with a bit of olive oil does the trick. I don’t recommend freezing this recipe, as it can alter the texture.

Ingredients

  • 4 tablespoon olive oil, divided
  • 1 teaspoon + pinch salt, divided
  • 8 ounces potato gnocchi
  • 1 cup bacon, cut into small pieces
  • 1 small yellow onion, diced
  • 2 garlic cloves, peeled and roughly chopped
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup Parmesan cheese
  • fresh oregano (or 1/2 tablespoon dried oregano)
  • 1/4 cup fresh dill
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil
  • 1/2 teaspoon cumin

  5. In the same pan, add ยฝ tablespoon of olive oil. Brown the bacon pieces, frying until golden, about 4-5 minutes. Drain and add to the gnocchi pot.
