I whipped up this easy cinnamon apple bread recipe last weekend to prepare for the momentous occasion of college football starting back up and wanted to share it with you today.  This bread is ah-mazingly delicious (I know I made that word up but believe me, it warrants it’s own made up superlatives!)

Why I love this recipe

I can’t even describe to you how insanely good this apple bread makes your house smell while its baking-and it’s perfection to have a slice when it’s warm out of the oven! It is a soft bread with a moist crumb and crunchy streusel-like topping and cinnamon swirl.

Ingredients

  • apples – red delicious, granny smith, and gala are some of my favorite varieties
  • cinnamon
  • brown sugar
  • granulated white sugar
  • baking powder
  • eggs
  • butter
  • flour
  • vanilla extract
  • milk

Step by step

  1. Preheat the oven and spray a loaf pan with nonstick spray.
  2. Mix the cinnamon sugar and chop your apples. Set aside.
  3. Beat the butter and sugar together in a stand mixer (affiliate link) or with a hand mixer.
  4. Add eggs and vanilla and mix until combined. Add the dry ingredients and mix again. Add the milk a little at a time until the batter is just combined.
  5. Pour half of the batter into the prepared loaf pan. Top with half of the apples and cinnamon sugar mixture.
  6. Pour in remaining batter and top with remaining apples and cinnamon sugar.
  7. Pat toppings into the top of the bread with the back of a spoon and bake for 50 minutes.
  8. Let the bread cool for ten minutes before removing from the pan.

Tips for best results

  • Be sure to choose a firm apple variety such as Granny Smith, Pink Lady, Gala or Fuji. Softer types of apples won’t stand up to the baking.
  • Swirl a knife through the batter if desired before baking if you want the apple chunks and cinnamon sugar more uniform through the bread.

Storage

Store bread covered with plastic wrap at room temperature for up to 3 days. Store in the refrigerator for up to a week.

This bread also freezes well. Simply allow the bread to cool completely then wrap in foil and store in a freezer bag. When you are ready to eat the bread, allow to thaw at room temperature before serving.

Ingredients

  • 1/2 cup packed light brown sugar
  • 1 1/2 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1 large apple, peeled and finely chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour a 9 x 5-inch loaf pan.
  3. Mix brown sugar and cinnamon together in a bowl and set aside.
  4. In a stand mixer (affiliate link), combine white sugar and butter until smooth.
  5. Add eggs and vanilla and continue to beat on medium speed until combined.
  6. Add flour and baking powder, then milk.
  7. Pour half the batter into the prepared pan.
  8. Cover with half of the apples.
  9. Pat apples into batter with the back of a spoon.
  10. Sprinkle with half of sugar and cinnamon mixture.
  11. Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture.
  12. Pat topping into the batter with the back of a large spoon. Use a butter knife held vertically to swirl figure eights through the batter to slightly incorporate the topping.
  13. Bake for 50 minutes or until toothpick inserted into the center comes out clean.
  14. Cool in pan 10 minutes before transferring to a cooling rack.

  1. Even my husband (who hates apple pie, or anything fruit) took a bite and said “Is that all you made is two loafs?” Making a double batch now! I used an extra tsp of cinnamon. Going to put a caramel drizzle with a pinch of toasted pecan pieces on one for the Caramel Apple feel.

  2. OMG THIS IS DELICIOUS! I just finished making it now! Its like eating heaven! I did a few changes though! I made my own Brown sugar (sugar and molasses) and put about 3/4 cup, I put about 2 1/2 teaspoons of cinnamon, I also made my own butter too lol! I put about 3/4 cup of milk aldo and used 3 small apples, I left the peeling on them and cut the pieces really small. It came out SO moist! The apples are carmalized its so good its like eating candy! I can’t wait to make it again, this is definitely a keeper! My husband is just in love with it! Yummayyy

    1. Hi there, I have not personally tried any egg substitutes in this recipe but a quick search online found this suggestion: 1 tablespoon cornstarch + 3 tablespoons water per egg} If you do try it I’d love to know how it turns out!

  6. I just made the Apple Cinnamon Bread and the flavor was great BUT half of it is still in the pan and cant get it out. I greased the pan well. Maybe if I use parchment paper and left it hang over the sides and pull it out as we do brownies? The reviews are great and the flavor is great. I made it for our family and for my neighbor but had to tell them it all fell apart. Any help, please because I do want to make it again.

    1. Oh no Nancy! Did you try to remove the bread while it was still hot? I recommend letting it cool about ten minutes before removing from the pan, then running a knife around the edges if it still wants to stick. I’ve not had a problem with this particular recipe sticking…what did you use to grease the pan? Nonstick spray?

      1. Thank you…maybe I didnt let it cool long enough..I used Pam. Where it split was in between the layers. I ran my knife along the edge…but you bet I am going to make it again!!

  14. Just wondering if I doubled this recipe if I could make it a coffee cake more instead. love the flavor of the bread but sometimes it is hard to slice and get out of pan without falling apart and I want to bring to work for a meeting, thought coffee cake maight be easier to deal with. Thanks

  15. I made this recipe last night using 1/2 whole wheat flour and 1/2 all purpose and it came out amazing! The Cooking time was a little longer by about 10-15 minutes, not sure if that’s because of the flour or not…. So delicious!

  16. I made this first seeing from another cooking site just last night but accidentally used brown sugar for batter, not that it is a bad thing as it made it very moist- I am going to try it again but use half sugar and brown sugar- Also I doubled my batch and baked in large casserole dish.
