Ingredients

These brownies are super easy with just a few simple ingredients:

  • strawberry cake mix
  • eggs
  • vanilla extract
  • vegetable oil
  • cream cheese
  • powdered sugar
  • strawberry jam
  • milk
  • fresh strawberries

Step by step

  1. Preheat oven to 350 degrees Fahrenheit and spray an 8 by 8 inch square baking dish with nonstick cooking spray or line with parchment paper.
  2. In a large bowl with a hand mixer or stand mixer (affiliate link), mix cake mix, oil, vanilla extract, cream cheese, and eggs until just blended. Pour the brownie batter into the prepared pan.
  3. Bake for 20-24 minutes or until middle is just set and a toothpick inserted in the middle comes out clean. Cool completely at room temperature.
  4. Once cake is cool stir together powdered sugar, jam, and milk to form a glaze. Spread over the brownies and garnish with strawberry slices before serving if desired.

Variations

  • skip the glaze and use a homemade or store-bought strawberry frosting instead, or simply serve without a topping
  • serve warm topped with vanilla ice cream
  • mix in white chocolate chips
  • add a sprinkle of powder sugar

Storage

Store leftover strawberry cake mix brownies in an airtight container in the refrigerator up to 4 days.

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 3 tablespoons cream cheese

  • 3/4 cup powdered sugar

  • 2 tablespoons strawberry jam

  • 1 1/2 tablespoons milk

  • Strawberries for garnish (optional)
