- (2) 15.25-ounce cans whole kernel sweet corn, drained
- (1) 15-ounce can black beans, drained and rinsed
- 1/2 cup mayonnaise
- 4-ounces cream cheese, softened
- 1 cup mild cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 large jalapeño, seeded and finely diced
- 8 slices thick-cut bacon, cooked and crumbled
- 1 medium red onion, finely diced (about 1/2 cup)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- green onion, chopped for garnish, optional
Instructions
- In a large bowl, combine corn, black beans, mayonnaise, cream cheese, cheddar, mozzarella, parmesan, jalapeño, bacon, onion, salt, and pepper. Mix until well combined.
- To serve cold, transfer to a serving dish, garnish with green onions if you like. To enjoy this dip warm, transfer it to a baking dish safe for the oven. Bake at 350°F for about 20 minutes, then finish under the broiler for 1 to 2 minutes to get a bubbly, melted cheese topping.
