Wednesday I had the opportunity to take a bus ride to Bath with a group of ladies to shop the Christmas markets there. It was a really fun day but also a long one. My husband had picked our children up from school and fed them dinner by time I walked in the door at 6:30 in the evening.
Waiting for me was a note from my children's school asking for bake sale contributions to be turned in Friday morning-just a day's notice! There may have been a moment or two of panic. I scoured the (pitifully bare) pantry and decided to try out a new truffle recipe. I'm so glad I did though because these Nilla Wafer Truffles turned out just perfect and were the fast easy recipe I needed!
Ingredients:
- 1 pack (11 oz) of Nilla Wafers
- 7 oz. cream cheese, softened
- 12 oz bag white chocolate morsels
- Sprinkles for decorating (optional)
Instructions:
In a blender (affiliate link) or food processor pulse Nilla wafers until finely crumbed. Combine crumbs and cream cheese until fully blended. Roll cookie mixture into 1" balls and freeze for one hour. Melt chocolate morsels according to package instructions. Use two forks to coat truffles in chocolate and place on wax paper lined plate. Top with sprinkles before chocolate hardens if desired.
I think these truffles are very light flavored-not as intensely sweet as the Oreo truffles I usually make. The white chocolate is the perfect compliment to the buttery vanilla flavor of the cookies. Please let me know what you think when you try them-leave me your thoughts in the comments!

These were amazeBALLS! We have a family of cream cheese lovers and are used to making the Oreo version. We couldn’t imagine that we would like these even more -but we do! With using the Nilla Wafers instead, these treats are savory and sweet!

hi there! If I make these a day ahead or in the morning should I refrigerate them or leave them room temperature?

I love the Nilla Truffles and so do my taste testers. Hopefully they will go over well at the bake sale tomorrow. My oreo truffles are less sweet because I take the filling out and just use the cookie. They are a big hit at the office

This is a link to vanilla (nilla) wafers on Amazon. Not advertising for them. Just posting so you can see what they are. And here is link to a recipe if you wanted to make your own. Or perhaps by reading the recipe you might recognize them by another name in new Zealand. https://www.foodnetwork.com/recipes/alton-brown/vanilla-wafers-recipe.html

Helen, Nilla Wafers is a brand name for vanilla waters, a very common (at least in the US!) store-bought cookie. They usually come in a box. I don't know if that helps at all, but just thought I'd mention that the generic name for the cookies is vanilla wafers.
Melissa, can't wait to try there! 🙂

Thanks for answering this Lisa! I buy them on the US base here in England, I'll have to look to see if there is something comparable next time I'm at the local supermarket, I'm sure there is. I hope you enjoy them!! ~Melissa

Can I ask, what are Nilla Wafers? The truffles look delicious, and I'd like to see if I can find a similar ingredient here in NZ.
Melissa says
Hi Helen-Nilla Wafers are a vanilla flavored cookie-I'm not sure what the equivalent would be in New Zealand. We're in the UK right now and I totally understand how hard it is to find equivalent things for recipes like this. (We go to a US base nearby to buy our "American" foods.) I'm sorry not to be more help, Melissa

Hey Helen,
The easiest way for me to find an equivalent to Nilla Wafers is by Googling 'vanilla wafer cookies' then clicking the 'Shopping' tab. I ordered mine online and had them sent to my door. I was even able to find kosher and gluten-free equivalents. I hope this helps.
Best regards,
Kayla
