Despite being a pretty straightforward and simple recipe, chicken parmesan always feels like a “fancy” meal to me. I love digging into a plate of crispy chicken smothered in marinara sauce and melted cheese. Luckily, this recipe is fast enough for busy weeknights so any day can be a special occasion!

I love how simple yet impressive this dish is. It’s got all the flavors of a Italian restaurant meal, but it’s easy enough to whip up on a busy evening.

The crispy breaded chicken paired with the rich marinara and gooey cheese is just irresistible. It’s also one of those meals that make the whole kitchen smell amazing, which always gets my family excited for dinner!

Ingredients

  • boneless and skinless chicken breasts
  • salt and pepper
  • all-purpose flour
  • eggs
  • breadcrumbs 
  • Parmesan cheese
  • marinara sauce
  • Mozzarella cheese
  • olive oil
  • fresh basil leaves
  • spaghetti or pasta of your choice

Step by step

  1. Preheat your oven to 400°F. Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick. Season both sides with salt and pepper.
  2. Place the flour in a shallow dish, beaten eggs in another, and a mixture of breadcrumbs and Parmesan in a third. Dredge each chicken breast in the flour, shaking off the excess, then dip in the egg, and finally coat with the breadcrumb mixture, pressing down to ensure it sticks.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 3-4 minutes on each side, until golden brown and crispy. Transfer the cooked chicken to a baking dish.
  1. Spoon marinara sauce over each chicken breast, then sprinkle shredded mozzarella on top. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through.
  2. Garnish with fresh basil if desired and serve hot. For a complete meal, serve over spaghetti or your favorite pasta.

Tips for best results

  • Pound the chicken evenly to ensure even cooking but no so hard that you tear the meat.
  • Let the breaded chicken rest for a few minutes before cooking to help the coating stick.
  • Cook over medium heat to avoid burning the breadcrumbs.

Variations

Make it your own! Try panko breadcrumbs for more crunch. Love spice? A sprinkle of red pepper flakes does the trick. Provolone also makes a great substitute for mozzarella.
