Where are my fellow pumpkin lovers? I know, I know-it’s not even September yet and here I go with the pumpkin! To be honest I was in World Market last week and they had Pumpkin Spice coffee set up for taste testing. I had one sip and it was all over for me-I’m in full-blown fall mode in the kitchen, starting with this microwave pumpkin pie oatmeal the whole family will love!

This is my favorite fall oatmeal recipe, it has the perfect pumpkin spice flavor, made with real pumpkin and maple syrup and the perfect amount of cozy spices. It’s like homemade pumpkin pie disguised as a healthy breakfast.

Why I love this recipe

  • This Pumpkin Pie Oatmeal took only 2 minutes to make so it’s perfect for those busy weekday mornings.
  • The oatmeal is filling so you don’t get those mid-morning snack cravings.
  • Pumpkin is full of vitamins and antioxidants so you can feel good about starting your day on the right foot! (Learn more about health benefits of pumpkin here.)
  • Because you don’t need much of the canned pumpkin puree it is great for using leftover pumpkin puree from other recipes like pumpkin spice creamer and pumpkin pancakes.
  • This is a one-bowl recipe, hurray for easy kitchen cleanup!

  • quick cooking oats
  • milk
  • pumpkin puree (NOT pumpkin pie filling!)
  • vanilla extract
  • pumpkin pie spice
  • maple syrup
  • pecans & cinnamon (optional)

Step by step

I make this easy pumpkin oatmeal in the microwave, fast and simple!

  1. Mix oats, milk, pumpkin, vanilla, and pumpkin pie spice in a bowl.
  2. Microwave for one minute
  3. Top with pecans, sprinkle with cinnamon, and indulge in pure pumpkin oatmeal delight!

Can I make this with old fashioned oats?

If you only have old fashioned oats I would make this on the stovetop by cooking the oatmeal in the milk until it’s cooked through, then combining the remaining ingredients and serving.

I don’t have pumpkin pie spice, what can I use instead?

To make your own pumpkin pie spice combine 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, ¼ teaspoon ground ginger, and ⅛ teaspoon ground cloves.

Can I use non-dairy milk?

You can substitute oat milk, soy milk, or almond milk in this recipe.

Store leftovers in an airtight container in the refrigerator up to 3 days. Reheat in the microwave with a little extra milk if needed.
