Bell peppers are one of my very favorite veggies! I often roast peppers in the oven but once the weather warms I also love to roast peppers on the grill!
Grilling peppers is a super easy and healthy way to prepare bell peppers. You can also use this method to cook other types of peppers, shishito peppers, cubanelles, and other longer peppers also taste wonderful roasted on the grill.
How to Make Grilled Peppers
- Cut the peppers and discard the seeds and stem.
- Toss the cut peppers with olive oil, salt, and pepper in a bowl.
- Grill over medium high heat for 8 minutes, turning once.
- Return to the bowl and toss with chopped parsley before serving.
How to Adjust this Recipe
This recipe is simple and can be changed in a variety of ways to change up the flavor. Here are some ways you can customize it:
- substitute the parsley for thyme, oregano, or basil
- drizzle with balsamic vinegar
- adjust the level of charring to your taste
- grill the peppers whole or cut smaller or larger pieces
How to Peel Peppers After Roasting
After roasting you will need to remove the skins before eating. The easiest method for this is to wait a few moments. Place the peppers in a bowl and cover the bowl. After a few moments the steam will release the pepper’s skin and it will peel off easily.

You can serve these peppers so many ways!

Description

Ingredients
- 4 bell peppers
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 2 tablespoons fresh parsley, chopped finely
Instructions
- Preheat a grill to medium high heat.
- Quarter peppers and remove seeds and stem inside.
- In a medium bowl, combine peppers, oil, salt and pepper. Toss to thoroughly coat peppers.
- Using tongs, arrange peppers on the grill rack skin side up. Close grill and cook 4 minutes.
- Flip peppers and close grill to cook another 3-4 minutes or until the desired charring is achieved.
- Remove peppers to bowl and toss with fresh parsley before serving.
