Creamy Cajun Chicken Pasta is a one-pot meal ready in just 30 minutes, making it perfect for busy evenings. Spicy Cajun seasoned chicken is tossed with penne pasta and spicy tomatoes and peppers for a dish just bursting with flavor!

I love one-pot meals, seriously love them! Anything to make kitchen cleanup easier is a winner in my book!

I also completely love meals like Szechuan Chicken, Pasta Carbonara, Mongolian Ground Beef Noodles, or this Cajun Chicken Pasta that I can get on the table in 30 minutes or less, so this recipe is a double winner!

This recipe as written is not for the meek or mild. It’s a bold and spicy flavor explosion! Depending on your spice tolerance you can tone it down (see below) or make it as written. For the record, my three boys will eat it at full spiciness so it totally depends on your personal taste.

How to Adjust the Spice

You can easily adjust the heat for your taste buds. You can cut the Cajun spices in half or choose mild Rotel to make this recipe less spicy.

How to Make Creamy Cajun Chicken Pasta

This easy recipe starts with Cajun-seasoned chicken, cut into bite-sized pieces. (My favorite Cajun seasoning is this one.) Toss the chicken in the spices to coat, then transfer to a large skillet with butter and oil. (I use this 5.5 quart saute pan.)

The chicken is browned nicely along with some diced onion, can’t you just see the flavor?

Chicken broth, penne pasta, diced tomato and chiles, and heavy cream are added to the mix, stirred, and left to simmer for ten minutes. Most of the liquid will be absorbed.

Description

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons Cajun Seasoning
  • 4 tablespoons butter
  • 3 tablespoons extra virgin olive oil
  • 1 small yellow onion, diced
  • 16 ounce box penne pasta
  • 4 cups chicken broth
  • 10 ounce can diced tomatoes with chiles
  • 1/2 cup heavy cream
  • green onion for garnish if desired

Instructions

  1. Cut chicken into 1/2″ cubes. Toss chicken in spices in a medium bowl.
  2. In a large skillet, heat butter and olive oil until very hot.
  3. Add chicken and cook until seared on all sides. (Chicken will not be cooked through at this pint.)
  4. Add diced onion and continue to cook until translucent, stirring often, about two minutes.
  5. Add pasta, broth, diced tomatoes and chiles, and heavy cream to the pan and stir to mix.
  6. Bring to a boil then reduce heat to medium-low and place lid on the skillet. Simmer 10 minutes or until pasta is cooked, stirring often to prevent sticking.
  7. Garnish with green onion if desired and serve immediately.

Notes

  • Reduce heat by reducing the amount of Cajun seasoning or choosing mild tomatoes and green chiles.
  • Increase heat by choosing hot tomatoes and green chiles.
  • Use a large skillet for this recipe, I use this 5.5 quart saute pan.
