- 1 avocado, halved and pit removed
- 2 eggs
- 1/4 cup bacon crumbles, about 2 slices cooked and crumbled
- 1/4 cup shredded cheese
- salt and pepper to taste

- Preheat the oven to 350°F.
- Use a spoon to scoop out half of each avocado to make room for the egg.
- Place the avocado halves on a baking sheet or balance them in a muffin tin.
- Crack an egg and pour it into each half of the avocado.
- Top with bacon and cheese, then bake for 20-30 minutes.
- Season with salt and pepper to taste, and serve immediately.
Notes
Use room-temperature avocados, not refrigerated ones.
Scoop out about a tablespoon of avocado to make room for the egg.
You can place the avocado halves in a muffin tin to keep them upright.
