Did you guys see my Facebook Live broadcast over the weekend? I was putting the finishing touches on these insanely delicious Peanut Butter Cup Cupcakes and showing you my process of taking the pictures.  

It was torture not to gobble them up in the process, I could smell the amazing peanut butter frosting and of course knowing that the chocolate peanut butter cupcakes held a surprise mini Reese’s peanut butter cup inside didn’t help! 

Luckily for me we were attending a party that evening and I was able to package these babies up to gift to the hosts-they wouldn’t have lasted long if I had kept them in the house!

I started these the easy way-boxed cake mix but you could use my easy chocolate cake recipe as well.  Sometimes you want the shortcut method, you know? Besides, with creamy peanut butter frosting this amazing you don’t need a whole lot else.

Ingredients

  • chocolate fudge cake mix and ingredients listed on box
  • miniature Reese’s peanut butter cups
  • butter
  • peanut butter
  • milk
  • powdered sugar

Step by step

  1. Preheat oven and line a muffin tin with cupcake liners.
  2. Prepare cake mix according to package instructions.
  3. Place a mini peanut butter cup in the middle of each muffin cup.
  4. Spoon the chocolate cupcake batter over peanut butter cups and bake according to package instructions.
  5. Allow to cool fully before frosting.
  6. Cream together butter, peanut butter, milk, and powdered sugar in a mixer on medium-high speed for 2-3 minutes, scraping down sides as needed.
  7. Pipe icing on cooled cupcakes, topping with another peanut butter cup.

Tips for best results

  • Use a pastry bag and wide piping tip to pipe the peanut butter frosting onto the cupcakes for the prettiest presentation.

Variations

You can make these peanut butter cupcakes instead of chocolate for the ultimate peanut butter lover’s dessert.

You can top these cupcakes with chopped peanuts or mini chocolate chips instead of the extra mini Reese’s peanut butter cups.

Storage

Store cupcakes in an airtight container in the fridge for up to 3 days. They freeze well without frosting in a freezer bag for up to 3 months.

Ingredients

  • 1 box chocolate fudge cake mix, prepared to batter according to package directions
  • miniature Reese’s peanut butter cups
  • 1 stick butter, softened
  • 1 cup peanut butter
  • 3 tablespoons milk
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a muffin tin with cupcake liners.
  3. Prepare cake mix according to package instructions.
  4. Place an peanut butter cup in the middle of each cupcake liner.
  5. Spoon cake batter over peanut butter cups and bake according to package instructions.
  6. Allow to cool fully before frosting.
