Why I Love This Recipe
There’s something magical about the combination of rich chocolate cake crumbles and creamy frosting, all wrapped up in a convenient, handheld package.
These easy homemade cake pops offer the perfect balance of sweetness and decadence, making them a crowd-pleaser for a birthday party, baby shower, or a tasty treat to enjoy at home.
It’s also a great way to use up leftover cake as well!
Ingredients
For this recipe, you’ll need just a few simple ingredients:
- Chocolate cake (homemade, store-bought, or made from box cake mix)
- Chocolate frosting (we suggest our chocolate buttercream frosting)
- Lollipop sticks/cake pop sticks – find these at the grocery or craft store
- Melting chocolate, almond bark, or chocolate candy melts
- Sprinkles or decorations of your choice
Step by step
- If using homemade cake, let the cake cool completely before starting the recipe. Crumble the chocolate cake into fine crumbs using your hands in a large bowl or using a food processor.
- Mix in about 1/3 cup chocolate frosting with the crumbled cake, adding more as needed, until the mixture is moist and holds together when pressed.
- Roll the cake mixture into small balls, about the size of a walnut, and place them on a cookie sheet lined with parchment paper or wax paper.
- Insert a lollipop stick into each cake ball. Place the chocolate cake balls in the freezer for about 15 minutes to firm up.
- Melt the chocolate or candy melts according to the package instructions in a medium bowl, then dip each cake pop into the melted chocolate coating, allowing any excess chocolate to drip off.
- Decorate the cake pops with sprinkles or other decorations while the chocolate coating is still wet.
- Place the decorated cake pops upright in a foam block or cake pop stand, or place them back on the baking sheet to set completely.
Tips for best results
- Ensure that the cake crumbs are fine and uniform to create a smooth texture in the cake pops.
- If the cake mixture is too dry, add more frosting gradually until it reaches the desired consistency.
- Work quickly when dipping the cake pops into the melted chocolate to prevent them from falling off the sticks or becoming misshapen.
- Experiment with different flavors of cake and frosting flavors to create unique combinations that suit your taste preferences. Some of our favorite combos are red velvet cake with vanilla frosting and melted white chocolate chips for the coating and peanut butter cake with peanut butter frosting and dark chocolate candy coating.
- These cake pops taste even better the next day so don’t be afraid to make them ahead of time.
Storage
Store the finished cake pops in an airtight container or covered with plastic wrap at room temperature for up to 3 days or in the refrigerator for up to a week.
Freeze the cake pops for longer storage, ensuring they’re well-wrapped in plastic wrap and stored in a freezer bag to prevent freezer burn. When ready to enjoy, simply thaw them in the refrigerator or at room temperature until softened.
