Can’t decide between brownies and cookies? Why not have both? That’s exactly what Oreo Brookies deliver! It’s like three desserts became best friends and decided to hang out together in your baking pan.
I start with a thick layer of homemade brownie batter, then add whole Oreo cookies, followed by chunks of cookie dough, then finish with more brownie batter and crushed Oreos on top. When you bite into one, you get the fudgy richness of a brownie, the chewy sweetness of cookie dough, and the satisfying crunch of Oreo cookies. It’s a chocolate lover’s dream!

Ingredients

- refrigerated cookie dough
- Oreo cookies
- eggs
- cocoa powder
- vegetable oil
- brown sugar
- granulated sugar
- salt
- baking powder
- vanilla extract
- unsalted butter
- all-purpose flour
- semi-sweet chocolate chips

Note:ย In a hurry? While I’m all about my homemade brownie batter, you can use a boxed brownie mix instead of making them from scratch if you prefer.
Step by step
- Preheat the oven to 350ยฐF and line a 9×9-inch baking pan with parchment paper.
- In a microwave-safe bowl, melt the butter, then transfer it to a large mixing bowl. Add both sugars and whisk until blended. Heat the mixture in 15-second bursts, stirring each time, until a glossy surface forms.
- Add the eggs, cocoa powder, salt, baking powder, vanilla extract, and vegetable oil. Whisk until the batter is smooth and fully combined.
- Stir in the flour gently until no dry streaks remain, then fold in the chopped chocolate pieces.
- Pour about three-quarters of the brownie batter into the pan and spread it evenly.




- Arrange a layer of Oreos over the batter, followed by a layer of cookie dough.
- Top with the remaining brownie batter and sprinkle some crushed Oreos over the surface.






- Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Allow the brownies to cool completely before cutting them into squares.


Tips for best results
- Don’t overbake. I pull mine out when a toothpick comes out mostly clean but with a few moist crumbs. This gives you a fudgy brownie instead of cakey.
- Cool completely before cutting. I know it’s tempting to dig in right away, but patience pays off. Cooling helps the layers set, so you get clean, beautiful squares.
- Press the cookie dough flat. Breaking the store-bought dough into chunks and pressing them slightly helps create an even layer.

Variations
While I think the classic version of Oreo Brookies is pretty much perfect, there are so many ways you can make this recipe your own. Here’s how:
- Try swapping a different flavor of Oreo like mint, peanut butter, or birthday cake Oreos to change up the taste completely.
- If you’re not a fan of semi-sweet chocolate chips, you can use milk chocolate chips or even white chocolate chunks in the brownie batter.
- For a different type of store-bought cookie dough, you can use chocolate chip, peanut butter, or sugar cookie dough; all work beautifully.
And if you want to go completely homemade, feel free to use your favorite chocolate chip cookie dough recipe instead of store-bought.
Don’t be afraid to get creative!
Storage
These Oreo brookies keep really well! Store them in an airtight container at room temperature, and they stay soft and fudgy for up to 3 days or you can keep them in the fridge for up to 7 days.
For longer storage, keep them in the freezer for up to 2 months. Wrap each piece tightly in plastic wrap and store in a freezer bag or other freezer-safe container (affiliate link).
Before eating a chilled brookie, I give it about 10 seconds in the microwave to warm it up and get that melty chocolate texture back.
